Preheat the oven to 350 degrees F
- 1 * 1 small onion, grated
- 3 * 3 garlic cloves, minced
- 1/4 * 1/4 cup chopped fresh Italian parsley leaves
- 2 * 2 large eggs
- 1/4 * 1/4 cup ketchup
- 1 * 1 teaspoon salt
- 3/4 * 3/4 teaspoon ground black pepper
- 2/3 * 2/3 cup dried bread crumbs
- 1 * 1 cup grated Parmesan
- 8 * 8 ounces ground beef
- 8 * 8 ounces ground pork
- 8 * 8 ounces ground veal
- 2 * 2 cups (packed) Ciabatta Stuffing with Chestnuts and Pancetta, recipe follows, or your favorite stuffing
- 1/2 * 1/2 cup marinara sauce
- 3/4 * 3/4 cup grated provolone
Cherry, Almond and Cinnamon Granola

You can Change this up to include your favorite items
- 4 cups old-fashioned rolled oats
- 2 cups sweetened, shredded coconut
- 2 cups sliced almonds
- 1 1/2 cups dried cherries, chopped (I used Dates)
- 1/2 cup vegetable oil
- 1/3 cup good honey
- 2 teaspoons ground cinnamon

Creamy Artichoke Soup

Heat olive oil in a heavy, large pot over medium heat
- 2 tablespoons extra-virgin olive oil
- 2 leeks, white part only, washed well and chopped
- 1 clove garlic, minced
- 1 small potato, peeled and chopped
- 1 (8-ounce) package frozen artichoke hearts, thawed
- 2 cups chicken stock
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons plus 1/3 cup mascarpone cheese
- 2 tablespoons chopped chives, for garnish
Holiday French Toast

- 1 cup brown sugar
- 1/2 cup butter -melted
- 3 teaspoons cinnamon
- 3 apples - Granny Smith, peeled, cored and thinly
- sliced (or 1 can of sliced apples)
- 1/2 cup dried raisins or cranberries
- 1/2-1 loaf of French bread or any other sweet bread-Brioche, Hawaiian.
- 6 large eggs
- 1 1/2 cup milk
- 1 tablespoon vanilla
Tarragon Lemon Chicken Salad

Preheat oven to 350F. Rinse and pat dry the breasts
- 4 chicken breasts (I prefer breasts on the bone,with skin on)
- black pepper
- sea salt
- olive oil
- 4 tbsp tarragon, fresh and finely chopped
- 4 tbsp parsley (flat leaf), fresh and finely chopped
- 3/4 cup–1 cup mayo (or half mayo and half Greek yogurt)
- 2 tbsp olive oil
- 1 stalk celery, finely chopped
- 1 lemon, juiced and zested
- 1 tsp salt
- 1 tsp black pepper
Lobster Corn Chowder

Remove the meat from the shells of the lobsters
- For the stock:
- 3 (1 1/2-pound) cooked lobsters, cracked and split
- 3 ears corn
- 6 tablespoons (3/4 stick) unsalted butter
- 1 cup chopped yellow onion
- 1/4 cup cream sherry
- 1 teaspoon sweet paprika
- 4 cups whole milk
- 2 cups heavy cream
- 1 cup dry white wine
- For the soup:
- 1 tablespoon good olive oil
- 1/4 pound bacon, large-diced
- 2 cups large-diced unpeeled Yukon gold potatoes (2 medium)
- 1 1/2 cups chopped yellow onions (2 onions)
- 2 cups diced celery (3 to 4 stalks)
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 teaspoons chopped fresh chives
- 1/4 cup cream sherry
Double Tomato Bruschetta

- 6 roma (plum) tomatoes, chopped
- 1/2 cup sun-dried tomatoes, packed in oil
- 3 cloves minced garlic
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup fresh basil, stems removed
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 French baguette
- 2 cups shredded mozzarella cheese
Broccoli Potato Soup

Mix broth, pepper, garlic, broccoli, potato, and onion in saucepot
- 6 cups chicken broth
- 1/4 teaspoon pepper
- 2 garlic cloves, minced
- 8 cups broccoli
- 3 large potatoes, sliced about 1/4" thick
- 1 large onion, sliced
- 1 3/4 cups milk
- 1/4 cup grated parmesan cheese
Hash Brown Potato Casserole

Mix all ingredients except cereal & half of butter
- 1 (32 oz) package of frozen hash brown potatoes
- 1 stick of butter, melted and divided in half
- 1 can of Cream of Chicken soup
- 1/2 cup chopped onion
- 1 (8 oz.) container lite sour cream
- 1 cup (8 oz.) Shredded cheddar cheese
- 1 teaspoon salt
- 2 cups crushed Corn Flakes
Tortilla Soup

Saute vegetables until soft
- 1/4 cup oil
- 2 tablespoons butter
- 1 cup onion, chopped
- 1 garlic clove, minced
- 4-6 stalks celery
- 2-4 carrots, chopped
- 3 whole chicken breasts (steam or boil in water) then shred with fork
- 1 teaspoon each- cumin, chili powder, salt
- 1 can stewed tomatoes
- 1 can Rotel tomatoes and green hot peppers
- 4 cups chicken broth
