Chocolate Pecan Pie

Coarsely chop 4 chocolate squares and set aside
- 1 pkg (8 squares) Baker's semi-sweet baking chocolate
- 1 refrigerator pie crust
- 2 tbs butter
- 3 eggs, slightly beaten
- 1/4 c firmly packed light brown sugar
- 1 c Karo light or dark corn syrup
- 1 tsp vanilla extract
- 1 1/2 c pecan pieces
Crispy Tortilla Chips

Lightly coat tortillas on both sides with spray
- 8 6inch corn or flour tortillas
- Nonstick cooking spray
- 2 tsp garlic-pepper lend
- 1/2 tsp sea salt
Tutti Fruity Ice Cream

This will freeze really hard when decanted and stored in the freezer
- 1 large can crushed pineapple
- 1 large jar maraschino cherries
- 1 3/4 c sugar
- 6 lemons
- enough whole milk to fill freezer
Chicken Noodle Soup

Easily changed to chicken and dumpling soup
- 6 carrots, peeled
- 4 ribs celery
- 3 medium onions
- 3 1/2 # chicken, whit meat cut into bite size pieces
- 3 qt low sodium chicken broth
- 5 black peppercorns
- 1 clove garlic, crushed
- 10 sprigs flat leaf parsley, chopped
- 2 sprigs thyme
- 1 bay leaf
- 2 tbs butter
- 4 leeks, trimmed and chopped
- 1 tsp salt
- 1 tsp fresh ground pepper
- 3 c medium egg noodles
Sausage, Jack, and Egg Breakfast Braid

- 1 (13.8oz) can refrigerated pizza crust dough

Simple Chicken and Dumplings

Place chicken in pot with wate boullion, and seasonings
- 4 chicken breasts, skinless, boneless
- 2 1/2 c water
- 1 1/2 tsp chicken bouillon granules
- 1/2 tsp poultry seasoning
- 1/8 tsp ground white pepper
- 1 med carrot, peeled, sliced length wise and diced
- 1 stalk celery, thinly sliced include leaves
- 1/2 c onion
- 1 c green peas
- 1 clove garlic
- 1/2 c white wine
- parsley, fresh, chopped, garnish
- cornstarch mixed w/ water to thicken
- Dumplings
- 1 1/2 c all purpose flour
- 2 tsp baking powder
- 1 tsp sugar
- 3/4 c buttermilk
Ranch Flavored Oyster Crackers

Add 1 bag Pepperidge Farm Cheddar goldfish 1 can mixed nuts
- Combine salad oil and dill and salad dressing mix. Combine well and pour over crackers. Bake at 250* for 15-20 minutes. Stir several times and cool.
Mushroom Caps - 1

Remove stems from mushrooms and dice
- 12 oz fresh mushrooms (about 24 medium)
- 1/2 c butter
- 1/4 c diced onion
- 2/3 c diced cooked ham
- 1/3 c grated Parsmesan cheese
- 1 1/2 tsp Worcestershire sauce
- 1 1/2 tbs minced fresh parsley
- 1/4 tsp pepper
Italian Style Beef and Pepperoni Soup

Cook beef and pepperoni, drain
- 1 # extra lean ground beef
- 1 c sliced turkey pepperoni(3oz)
- Vegetable cooking spray
- 1 c mushrooms, fresh, sliced
- 1 green bell pepper, seeded and chopped
- 1 bunch green onions, chopped
- 1 cloves garlic, minced
- 1 tsp evoo
- 2 tbs tomato paste
- 1 (28oz) can crushed tomatoes
- 4 c low sodium fat free chicken broth
- 1 tbs basil, fresh, chopped
- 1 tbs oregano, chopped, fresh
- 1 tsp pepper
- Garnishes: Chopped basil and shredded Parmesan cheese
