Lemony Penne & Broccoli

1. Cook penne following package directions, about 10 minutes
- 8 ounces whole-wheat penne
- 4 tablespoons olive oil
- 6 cloves garlic, sliced
- 1 pound broccoli florets
- 1 can (19 ounces) cannellini beans, drained and rinsed
- Juice and zest of 1 lemon
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1/2 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- Tossed salad (optional)
White Turkey Chili

1. Set aside 1 cup of the beans
- 2 cans (15.5 ounces each) small white beans, drained and rinsed
- 1 package (20.8 ounces) ground turkey breast
- 2 jalapeno peppers, seeded and minced
- 2 green peppers, seeded and chopped
- 1 poblano pepper, seeded and chopped
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2-1/2 teaspoons ground cumin
