  • 2 teaspoons canola oil
  • 2 carrots, peeled and sliced 1/4 inch thick

  • 1 pound 95 percent lean ground beef
  • 1/4 cup all-purpose flour
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 1/2 cups low-sodium chicken broth
  • 3/4 cup beer
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons minced fresh thyme or 1/2 teaspoon dried
  • 1 cup frozen peas
  • 1 ear corn, kernels removed (approx 3/4 cup frozen)
  • Salt and pepper
  • Topping
  • 1 1/2 pounds Yukon Gold potatoes (about 3 medium), peeled and cut into 2‑inch chunks
  • 1 tablespoon unsalted butter, melted
  • 1/3 cup 2 percent lowfat milk, warmed

  • 3/4 cup sugar
  • 1/4 cup bakibg powder
  • 1 1/2 cups buttermilk (or add few drops of lemon juice and let stand in regular milk)
  • 1/2 cup yogurt (unflavored)
  • 2 1/2 T caraway seeds (optional)
  • 1 1/4 cups currants (optional)
  • 1 large egg yolk, beaten (I don't always use this. You can use milk also)
