Carnitas Filling

Slice Pork into 1 inch slices
- 1 pound boneless pork shoulder
- 1 clove garlic, crushed
- 1 onion, cut into 4 wedges
- 1 carrot, peeled and cut into 1 inch pieces
- 1 celery, cut into 1 inch pieces
- 1 tomato, chopped (or 1 can chopped tomatoes w/ juice)
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon pepper
- 1 bay leaf
Soy Ginger Dip (fondue)

1. Mix together. 2. Add salt and pepper to taste
- 1/2 cup Low salt soy sauce
- 2 tbsp Fresh ginger, grated
- 2 tbsp Dry sherry
- 4 tsp Splenda
- 2 tsp Garlic, minced
Garlic dipping sauce (fondue)

- 1/4 cup Canola Oil
- 3 Garlic Cloves, Crushed
- 2 Green Onions, Sliced
- 1/2 cup Ketchup
- 2 tbsp Vinegar
- 2 tbsp Worcestershire Sauce
- 1 tsp Mustard Powder
- To taste Salt and Pepper
Shepherd's Pie

You can substitute 3/4 cup frozen corn, thawed, for the fresh corn
- Filling
- 2 teaspoons canola oil
- 2 carrots, peeled and sliced 1/4 inch thick
- 1 onion, minced
- 1 celery rib, sliced 1/4 inch thick
- 1 pound 95 percent lean ground beef
- 1/4 cup all-purpose flour
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 1/2 cups low-sodium chicken broth
- 3/4 cup beer
- 1 tablespoon Worcestershire sauce
- 2 teaspoons minced fresh thyme or 1/2 teaspoon dried
- 1 cup frozen peas
- 1 ear corn, kernels removed (approx 3/4 cup frozen)
- Salt and pepper
- Topping
- 1 1/2 pounds Yukon Gold potatoes (about 3 medium), peeled and cut into 2‑inch chunks
- 1 tablespoon unsalted butter, melted
- 1/3 cup 2 percent lowfat milk, warmed
- 1/4 cup low-fat sour cream, room temperature
- Salt and pepper
Bearnaise sauce (fondue)

- 4 tbsp Dry white wine
- 4 tbsp Tarragon vinegar
- 1 tsp Green onions, finely chopped
- 1 tsp Parsley, finely chopped
- 1/4 tsp Thyme
- 1/4 tsp Tarragon
- 3 Egg yolks
- 1/2 cup Butter
- Salt and pepper
IRISH SCONES

Makes 32 scones. Very soft and delicious
- 2 sticks plus 2T butter
- 5 1/2 cups all purpose flour
- 3/4 cup sugar
- 1/4 cup bakibg powder
- 1 1/2 cups buttermilk (or add few drops of lemon juice and let stand in regular milk)
- 1/2 cup yogurt (unflavored)
- 2 1/2 T caraway seeds (optional)
- 1 1/4 cups currants (optional)
- 1 large egg yolk, beaten (I don't always use this. You can use milk also)
Sesame Pork Roast

Cut roast in half; place in large resealable plastic bag or glass dish
- 1 (4 pound) boneless pork shoulder roast, trimmed
- 2 cups water
- 1/2 cup soy sauce
- 1/4 cup sesame seeds, toasted
- 1/4 cup molasses
- 1/4 cup cider or white vinegar
- 4 green onions, sliced
- 2 teaspoons garlic powder
- 1/4 teaspoon cayenne pepper
- 3 tablespoons cornstarch
- 1/4 cup cold water
Beef Meatballs fondue

1. Pour the vegetable oil in a pan and cook the chopped up bacon slice
- 1 tbsp Vegetable oil
- 1 Bacon slice, finely chopped
- 1 tsp Fresh thyme, finely chopped
- 1 tbsp Onion, finely chopped
- 1 tbsp Celery, finely chopped
- 1 Egg
- 3 tbsp Fine bread crumbs
- 1 1/4 lb Lean ground beef
- 1 tsp Montreal steak spice
- Salt and pepper to taste
