- 1/4 Cup Olive Oil
- 3 Cloves minced garlic (don’t use the jarred stuff)
- 2 Tablespoons dry rub (Recipe below)
- 2 Pounds Large de-veined shrimp.
- Sea Salt
- Small handful chopped fresh cilantro
- 1 Lime – divided
- Dry Rub Recipe
- 3 Tablespoons each of fresh ground pepper – (use a spice/coffee grinder and save your wrists); Salt, Dark Brown Sugar, Paprika,
- 1/2 Teaspoon chipolte pepper powder
- 1/2 Tablespoon each of cayenne pepper, garlic powder, onion powder
- 1/4 Teaspoon cinnamon

Cumin Fondue Dipping Sauce

1. In a blender, mix the cream, cheese, lemon juice and cumin until smooth
- 1/2 cup 10% Cream
- 1/4 cup Cambozola Cheese, Cubed
- 1 tbsp Lemon Juice
- 1 tsp Cumin Powder
- To taste Salt, Pepper and chili powder

Italian Sausage Tortellini Soup

In a large stock pot, over medium heat, saute onion in olive oil until translucent
- 1 T extra virgin olive oil
- 1-2 onions, peeled & diced
- 6-8 cloves garlic, peeled & minced
- 2 lbs Italian sausage, remove casings & cut into bite size pieces (sometimes I use turkey sausage)
- 2 large cans diced tomatoes
- 16 oz can of tomato sauce
- 4-6 cups of beef broth
- 4 cups of chicken broth
- 4-6 carrots, peeled & diced
- 4-6 zucchini, diced
- 1 large package of cheese tortellini
- *Parmesan cheese, grated (optional topping)
