Porcupine Meatballs

"Simple and delicious. Beef meatballs with rice, simmered in tomato soup
- 1 (10.75 ounce) can condensed tomato soup
- 1/2 cup water
- 2 pounds ground beef
- 1 1/4 cup uncooked rice
- 1 14. oz can diced tomato
- 1 small minced onion
- 1 teaspoon salt
- 1 dash ground black pepper
Summer Salad with Cumin-Crusted Salmon

"For the greatest omega-3 benefit buy the fattiest fish
- Salad:
- 2 ounces pine nuts
- 5 cups mixed greens
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup scallions, sliced
- 1 large orange, cut in 1-inch chunks
- 1/2 cup feta cheese, crumbled
- 1 cup cilantro, chopped
- Dressing:
- 2 tablespoons orange juice concentrate
- 4 tablespoons olive oil
- 1/2 teaspoon cumin
- 1 1/2 tablespoons balsamic vinegar
- 2 garlic cloves, crushed
- 1/4 teaspoon salt
- Cumin-Crusted Salmon:
- 1 1/2 tablespoons cumin
- 2 teaspoons paprika
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound salmon fillet, skin removed
Apple Crisp

Preheat oven to 350 degrees F (175 degree C)
- 4-6 apples, peeled, cored and sliced - use a mix of eating and cooking. Macintosh and the various Pink Lady, Jazz; many of them are Golden Delicious (this is an apple I do not like) mixes.
- 1 cup white sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup water
- 1 cup all-purpose flour
- 1 cup packed brown sugar. 1/2 1/2 med and dark
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup butter, melted
Arugula and Prosciutto Salad with Pears, Blue Cheese and Pecans

- 3 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt
- Pepper
- 1 bunch arugula, washed and stemmed
- 1 cup pears, sliced thin
- 1/4 cup Maytag Farms blue cheese
- 1/2 cup pecans, toasted
- 1/4 pound prosciutto, sliced thin

- 6 pounds pork butt roast
- 2 onion, sliced
- 20 new potatoes, raw
- 16 carrots, peeled
- 2 cups mushrooms, halved

- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup beer
- 1/2 cup plain yogurt
- 1/2 cup mayonnaise
- 1 lime, juiced
- 1 jalapeno pepper, minced
- 1 teaspoon minced capers
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried dill weed
- 1 teaspoon ground cayenne pepper
- 1 quart oil for frying
- 1 pound cod fillets, cut into 2 to 3 ounce portions
- 1 (12 ounce) package corn tortillas
- 1/2 medium head cabbage, finely shredded
