Reduced Fat Chicken and Cheese Enchiladas

Preheat oven to 350 degrees
- 1 onion chopped fine, 1 cup
- 1 t vegetable oil
- salt and pepper
- 1 T minced canned chipolte chile in adobo sauce plus 1 t adobo sauce
- 3 garlic cloves minced
- 2 t ground cumin
- 2 t chili powder
- 1 15 oz cn tomato sauce

- 1 lb boneless skinless chicken breasts trimmed
- 8 oz shredded cheese..2 cups

1. For pickled onions, place onion slices in a medium heatproof bowl

Dad's Venison Chili

AirBaked Almost-Famous Chocolate Cake

Preheat the AirFryer at 180°C for 5 minutes
- 180 gm Brown Sugar
- 109 gm All-purpose Flour
- 60 gm Unsweetened Cocoa Powder
- 3/4 tsp Baking Powder
- 3/4 tsp Baking Soda
- 1/2 tsp Salt
- 1 Large Egg
- 1/2 cup Milk
- 1/4 cup Vegetable Oil
- 1 tsp Vanilla Extract
- 1/2 cup Hot Water (I've added some instant coffee mix to make more flavorful)
Skillet Shrimp and Asparagus

1 Sauté onions and garlic: Heat olive oil and butter in a large skillet on medium high heat
- 1 Tbsp olive oil
- ◾1 Tbsp butter
- ◾1 medium onion, quartered, thinly sliced (about 1 1/2 cups)
- ◾4 cloves garlic, minced (about 4 teaspoons)
- ◾1/2 pound small red skinned new potatoes, cut into 1/4-inch slices or small dice
- ◾Salt (to taste)
- ◾Pinch of black pepper
- ◾1/2 cup water
- ◾3/4 pound of asparagus, woody ends discarded, spears thinly sliced on the diagonal
- ◾1 pound peeled and deveined shrimp (can leave tails on for presentation if you want), 16-20 count
- ◾1 teaspoon lemon zest
- ◾1 Tbsp lemon juice
- ◾2 Tbsp minced chives or green onion greens
