Instant Pot Beef Gyros with Tzatziki Sauce

Add beef, onion, oil, garlic powder, oregano, salt, pepper and lemon juice to the Instant Pot
- 1 1/2 lbs beef chuck roast or beef cross rib roast, sliced into thin quarter inch strips
- 1 large onion, sliced very thinly
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp fresh lemon juice

- Salt and pepper, to taste

- For the Tzatziki Sauce
- 1 cup plain Greek yogurt
- 1 cup diced cucumber, seeded and shredded
- 1 Tbsp dried dill or 2 Tbsp fresh dill
- 1/4 tsp salt
- 1 garlic clove, minced

- 1 cup mayonnaise or 1 cup salad dressing
- 1 ⁄4 cup lemon juice concentrate

- 1 (7 ounce) package rotini pasta or 1 (7 ounce) package other pastas, cooked and drained

Instant Pot Bolognese

Turn the Instant Pot to saute
- 1 large onion, finely chopped
- 2 carrots, finely chopped
- 3 stalks of celery, finely chopped
- 3 cloves garlic, minced or pressed
- 1 Tbsp olive oil
- 1 can tomato paste (6 oz.)
- 2 lbs. hamburger
- 1 Tbsp salt
- 1 tsp black pepper
- 1 1/2 tsp dried thyme
- 2 tsp dried oregano
- 1 can crushed tomatoes (28 oz.)
- 1 cup whole milk
- 1 T sugar
- 1 cup dry red wine (or low sodium beef broth)
Homemade Fermented Sauerkraut

Core and shred the cabbage
- 1 1/2 pounds trimmed green or red cabbage about 1 head
- 1 1/2 T pickling salt or sea salt if using weights, if not using weights, add another 1 1/2 to to 1 qt warm water and use that for weight. If bag breaks, it will just be more brine.
Air Fryer Spring Rolls

Heat some of the oil in a an and saute the vegetables on a very high heat
- spring roll wrappers – available from a Chinese Supermarket
- 1/2 cabbage – sliced in very thin strips – as for coleslaw
- 2 large carrots – grated on the coarse side
- a dash of say sauce
- a few drops of sesame – optional
- egg noodles – optional
- toasted sesame seeds
- 100 about 100ml vegetable oil
- 1 egg white – beaten
