Chicken Cordon Bleu Sliders

Preheat the oven to 400 degrees F
- 12 dinner rolls
- Honey mustard sauce-
- 1/4 cup mayonnaise
- 1 1/2 tablespoons Dijon mustard
- 1 1/2 teaspoons honey
- 1 teaspoon lemon juice
- Pinch of salt
- Sandwiches-
- 1/2 lb thinly sliced black forest ham
- 1/2 lb thinly sliced deli chicken breast
- 1/2 lb sliced swiss cheese
- 3 tablespoons butter (melted)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley

- 1/2 c water for mix

Heat the oven to 350° F
- 3 eggs
- 1 teaspoon baking powder
- 1 cup oil
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/2 cup sugar
- 2 cups flour
- 2 jars (junior size) baby food carrots
- 1 1/2 teaspoon vanilla extract
- Frosting
- 2 tablespoons margarine
- 3 ounces cream cheese
- 2 cups powdered sugar
- 2 teaspoons milk

For 1/2 recipe added 4 spotches of tabasco and finish with file powder
- 3 large boneless skinless chicken breast halves
- Salt and pepper
- 1/4 cup vegetable oil
- 1 pound smoked sausage, cut into 1/4-inch slices
- 1/2 cup all-purpose flour
- 5 tablespoons margarine
- 1 large onion, chopped
- 8 cloves garlic minced
- 1 green bell pepper, seeded and chopped
- 3 stalks celery chopped
- 1/4 cup Worcestershire sauce
- 1/4 bunch flat leaf parsley, stems and leaves, coarsely chopped, plus chopped leaves for garnish
- 4 cups hot water
- 5 beef bouillon cubes
- 1 (14-ounce can) stewed tomatoes with juice
- 2 cups frozen sliced okra
- 4 green onions, sliced, white and green parts
- 1/2 pound small shrimp, peeled, deveined and cooked
Simple Au Gratin Potatoes Recipe

Preheat oven to 350°. In a large saucepan, melt butter over low heat
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1-1/2 teaspoons salt
- 1/8 teaspoon pepper
- 2 cups 2% milk
- 1 cup (4 ounces) shredded cheddar cheese
- 5 cups thinly sliced peeled potatoes (about 6 medium)
- 1/2 cup chopped onion
Spicy Maine Shrimp Sauce Over Pasta

Here in New England, Maine shrimp are small red shrimp available seasonally and I love to take advantage of them by...
- Maine shrimp rinsed and patted dry, shells on (I used a 1/2 lb. for 1 generous serving since it was my first of the season.)
- 2 whole medium cloves of garlic, peeled
- Canned tomatoes, roughly just under a 1/2 can or so (kitchen ready, strained Pomi, your favorite tomato for pasta sauce)
- 1/2 c. roughly chopped Italian flat leaf parsley, 1 bay leaf (not California), pinch of dried oregano
- Dried chili pepper to taste (I used 1 Thai chili, crushed between my fingers)
- Olive oil
- Salt and ground black pepper to taste
- Pasta (I prefer linguine fini for fish sauces.)
Mini Blueberry-Lemon Cheesecakes

Preheat oven to 325°F. Line 24 ( ½-cup) muffin cups with paper liners or coat with cooking spray
- 1 1/2 cups graham cracker crumbs (from about 10 whole graham crackers)
- 3 tablespoons canola oil
- 1 15-ounce container part-skim ricotta cheese
- 2 8-ounce packages reduced-fat cream cheese, at room temperature

- 1 cup sugar
- 2 teaspoons lemon zest
- 5 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups blueberries, fresh or frozen (not thawed), divided
