This irregular-shaped Italian bread is so called because it looks like and old shoe or slipper
- FOR THE BIGA STARTER:
- 1/4 oz fresh yeast
- 3/4 -scant 1 C lukewarm water
- 3 C unbleached plain flour, plus extra for dusting
- FOR THE DOUGH:
- 1/2 oz fresh yeast
- 1 2/3 C lukewarm water
- 4 T lukewarm milk
- 5 C unbleached white bread flour
- 2 t salt
- 3 T extra virgin olive oil

- 4 cups lukewarm water (105°F to 115°F)
