Falafel (Middle Eastern fried chickpea patties)

Falafel is the original veggie burger and is a common dish throughout the Middle East
- 1 C Chickpeas, dried
- 1/2 C Breadcrumbs
- 2-3 cloves Garlic, crushed
- 1/4 C Parsley, minced
- 2 T Flour
- 1-2 t Salt
- 1 t Baking powder
- 1 t Ground coriander
- 1 t Ground cumin
- 1/2 t Turmeric (optional)
- 1/2 t Cayenne pepper
- Oil for deep frying
Arroz con Pollo

Arroz con pollo, or "rice with chicken," originated in the Andalusia region of Spain
- Chicken, cut into serving pieces -- 2 1/2 to 3 pounds
- 1 Lemon or lime, juice only
- 3 to 5 cloves Garlic, minced
- Salt and pepper -- to season
- 3 T Olive oil
- 1 Onion, chopped
- 1 Green or red bell pepper, chopped
- 3 to 5 cloves Garlic, minced
- 1 cup Ham (optional), chopped
- 3 cups Rice
- 1 cup Tomato, seeded and chopped
- 3-1/2 cups Chicken stock or water
- 10 to 15 Green olives
- 1 cup Peas
- 2 t Oregano
- Salt and pepper -- to taste
- 1/2 bunch Cilantro chopped
Taratour (Middle Eastern sesame sauce)

- 1/4 C Tahini
- 1-2 t Salt
- 1/2 C Water
- 1/4 C Lemon juice
Chocolate Eclair Dessert

Easy and delicious quick dessert!
- Filling:
- 2 (3.5 oz) boxes vanilla instant pudding
- 3 C milk
- 1 (12 oz) container Cool Whip
- Graham crackers
- Topping:
- 1/3 C cocoa
- 1 C sugar
- 1/4 C milk
- 1 stick unsalted butter
- 1 t vanilla
Gateau de Crepe

1. The day before, make the crepe batter and the pastry cream
- For the crepe batter:
- 6 tablespoons butter
- 3 cups milk
- 6 eggs
- 1 1/2 cups flour
- 7 tablespoons sugar
- Pinch salt
- For the vanilla pastry cream:
- 2 cups milk
- 1 vanilla bean, halved and scraped
- 6 egg yolks
- 1/2 cup sugar
- 1/3 cup cornstarch, sifted
- 3 1/2 tablespoons butter
- For assembly:
- Corn oil
- 2 cups heavy cream
- 1 tablespoon sugar or more
- 3 tablespoons Kirsch
- Confectioners’ sugar.

Pizza Sauce

Place all ingredients in a blender and pulse until it reaches desired consistency
- 1 (14 1/2 oz) can diced tomatoes
- 1 (6 oz.) can tomato paste
- 1/4 t oregano
- 1/4 t basil
- 1/4 t black pepper
- 1/4 t salt
- 1/8 t garlic powder
- 1/8 t onion powder
- 1 T sugar
Chicken Alfredo Biscuit Bake

Prepare a large baking dish by spraying with non-stick spray
- 2 T Olive Oil
- 1 Medium (about 1 Cup) Onion, Large Dice
- 1 C Frozen Peas, rinsed under hot water to partially thaw
- 1 C Frozen Corn, rinsed under hot water to partially thaw
- 1 C Sliced Sweet peppers, stems, seeds and white membrane removed
- 2 t Italian Seasonings (I used fresh minced Thyme, Oregano and Basil)
- 2 C meat taken from a chicken, large dice
- 1-1/2 C Alfredo Sauce
- Several grinds from a Pepper Mill (to taste)
- 1 Can or tube Buttermilk Biscuits (I used Pillsbury Grand brand)
- 1 Stick Butter melted
- 1/2 C Parmesan Cheese, grated
- 1 T Butter Melted
- 1 TBS Parmesan Cheese, finely grated
Pulled Chicken Slider Sandwiches

Place 3 chicken breasts in the base of the slow cooker
- 3 chicken breasts
- 1/2 onion, chopped
- 2 garlic cloves, crushed
- 6 oz. can tomato paste
- 1 T cider vinegar
- 3 T prepared mustard
- 3 T brown sugar
- 12 dinner or "slider" rolls
Russian Tea Cakes

Preheat oven to 300 F. Line a baking sheet with parchment paper
- 1 1/2 C toasted pecans
- 6 T granulated sugar
- 1 C unsalted butter, room temperature
- 1/2 t pure vanilla extract
- 2 C all-purpose flour

- 1/4 C powdered sugar
