Almond Joy Tarts

To make the tart dough, put the almonds and sugar in the bowl of a food processor
- For the tart dough:
- 1/4 cup whole toasted almonds
- 1/4 cup sugar
- 1 1/4 cups plus 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into cubes
- 1 large egg, lightly whisked
- For the filling:
- 8 ounces white chocolate, chopped
- 1 cup heavy cream
- 2 cups unsweetened shredded coconut
- 1 tablespoon rum
- For the chocolate glaze:
- 4 ounces semisweet chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup whole toasted almonds
Chipotle Chicken Tostada Bites

The night before serving, pour 1/4 c
- 1/4 c. plus 2 TBSP chipotle salsa, pureed (I like Herdez brand)
- 1 large boneless, skinless chicken breast
- 2 avocados
- zest and juice of one lime
- 2 TBSP red onion, finely minced
- 1 clove garlic, pressed or finely minced
- 1 Roma tomato, seeds removed, finely chopped
- 2 TBSP fresh cilantro, minced
- 1/2 jalapeno pepper, seeds and ribs removed, finely minced (optional)
- 1/4 tsp. cumin
- salt and pepper, to taste
- 24 round tortilla chips
- 24 cilantro leaves, for garnish

- 1/3 cup heavy cream
- 4 tablespoons butter
- 8 ounces dark chocolate, coarsely chopped
- 20 almonds, toasted
- 1 1/4 cups sweetened flaked coconut, toasted
Brie Phyllo Cups with Honeyed Figs and Almonds

- 8 sheets phyllo dough
- 2 tablespoons unsalted butter, melted
- 2 President Brie logs, sliced into 1/8-inch thick rounds
- 1/2 cup finely chopped dried figs

- 2 tablespoons honey
