Veal Scallopine with Marsala and Mushrooms

Season veal with salt and pepper on both sides and lightly dredge in seasoned flour
- 3/4 pounds veal scallopine, pounded and flattened
- Salt
- Freshly ground black pepper
- Seasoned flour, for dredging
- 1 tablespoon vegetable oil
- 2 tablespoons butter
- 1 cup sliced mushrooms
- 2 shallots, minced
- 2 cloves garlic, minced
- 1/4 cup Madeira wine
- 1/2 cup chicken stock
- 1/3 cup heavy cream
Smoky Chipotle and Cheddar Mac

Place a pot of water on to boil for macaroni
- 1 * 1 pound macaroni elbows or cavatapi corkscrew shaped pasta twists
- * Salt
- 1 * 1 tablespoon extra-virgin olive oil, 1 turn of the pan, plus some for drizzling
- 3/4 * 3/4 pound chorizo, 1 package, casing removed and diced
- 1 * 1 (15-ounce) can diced fire roasted tomatoes, drained
- 1 * 1 small onion, finely chopped
- 2 * 2 chipotle in adobo and their juices, chopped or 1 tablespoon ground chipotle chili
- 3 * 3 tablespoons all-purpose flour
- 3 * 3 cups whole milk
- 1 * 1 cup chicken stock
- 3 * 3 cups shredded smoked Cheddar
Beefed Up Baked Beans

Spray 9×13 baking dish with nonstick cooking spray
- 28 ounce can baked beans, undrained (or 2-15 ounce cans)
- 2-15 ounce cans navy beans, undrained (or bean of your choice)
- 1 pound ground beef, cooked and drained (can substitute cooked shredded pork bbq if you like)
- 1 small onion, chopped
- 1 cup Barbecue sauce
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Yellow Mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 to 4 slices uncooked bacon

Herbed Focaccia

Add the yeast to the water and stir to combine
- * 1 package (2 1/2 tsp) instant yeast
- * 1/2 cup warm water (110-115 degrees)
- * 1 1/2 cups warm milk
- * 1/4 cup + 2 Tbs olive oil
- * 5 cups all-purpose flour
- * 2 tsp salt
- * 1/2 Tbs minced fresh rosemary
- * 1 tsp dried lavendar

Cappuccino Fudge

Line an 8” square baking pan with aluminum foil; set aside
- 1 (7 oz.) jar marshmallow cream
- ½ c. sugar
- 2/3 c. heavy whipping cream
- ¼ c. margarine/butter
- 1 t. instant coffee powder
- ¼ t. cinnamon
- ¼ t. salt
- 1 (12 oz.) bag semi-sweet chocolate chips
Poblano Mac & Cheese

Roast the poblanos under the broiler until blackened, ~5 minutes per side
- for serving:
- 2 poblano chiles
- 8 oz. elbow pasta
- 2 Tbs. unsalted butter
- 4-6 garlic cloves, minced
- 2 Tbs. all-purpose flour
- 1 1/2 c. whole milk
- 1 tsp. mustard powder
- 1/4 tsp. cayenne
- 1/2 tsp. ground cumin
- 1 tsp. lime zest
- 1/2 c. chopped cilantro
- sea salt
- freshly ground black pepper
- 12 oz. grated white cheddar cheese (I used half white, half yellow)
- Cotija cheese (or goat cheese...not the same thing, but I had it and wanted to use it and it rocked)
- Tortilla chips, crushed
Eggnog Custard Pie

Preheat oven to 425F. In a large bowl, whisk together eggs, sugar vanilla, nutmeg and salt until well combined

- 1/4 tsp freshly ground nutmeg

- 1 cup milk
- 1 1/2 cups eggnog
- 9-inch pie crust, unbaked pastry crust or crumb crust
Key Lime Pie Cupcakes

- Graham Cracker Crust:
- 2 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 2 TB lime zest
- 1/2 cup (1 stick) unsalted butter, melted
- Key Lime Cupcakes:
- 3 cups cake flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 16 tbsp (2 sticks) unsalted butter, at room temperature
- 2 cups sugar
- 5 large eggs, at room temperature
- 1 1/4 cups plain yogurt
- 1 tsp vanilla extract
- Juice of 1 small key lime
- 1 tbsp key lime zest
- Yield: 24 cupcakes
Bourbon Spiked Sweet Potato Praline Pound Cake
