Fiesta Tortilla Shrimp Casserole

1. Preheat oven to 350 degrees F
- 6 6-inch corn tortillas
- 1 cup green salsa
- 1/2 cup sour cream
- 3 tablespoons all-purpose flour
- 4 teaspoons dried cilantro, crushed
- 1 12-ounce package frozen peeled and deveined cooked shrimp, thawed
- 1 cup frozen whole kernel corn
- 1 cup shredded Mexican Chihuahua cheese or farmer cheese (4 ounces)
- Snipped fresh cilantro, sour cream, and/or chopped tomato (optional)
Meatball Sliders with Basil Pesto

To make the sauce, heat the olive oil in a large stockpot or Dutch oven over medium heat
- For the sauce:
- 2 tbsp. olive oil
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 1 (28 oz.) can tomato puree
- 1 (28 oz.) can tomato sauce
- 2 tsp. dried parsley
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 2 tsp. salt
- 2 tbsp. sugar
- Water (optional)
- For the meatballs:
- 1/2 cup breadcrumbs, divided (I like panko)
- 1/4 cup milk
- 1 lb. ground beef
- 1 egg
- 1 clove garlic, minced
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 tsp. dried parsley
- 1/2 tsp. dried basil
- For the pesto:
- 1 cup packed fresh basil leaves
- 2 small cloves garlic
- 2 tbsp. pine nuts
- 1/4 cup olive oil
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
- For the sliders:
- 2 dozen About 2 dozen white dinner rolls
- Spray olive oil
- Sliced provolone cheese (about 12 slices, depending on size)
Bananas Fosters Coffee Cake

Position a rack to the center of the oven and preheat it to 350 degrees
- For the cake:
- 6 tablespoons unsalted butter, divided
- 3/4 cup dark brown sugar
- 6 tablespoons dark rum
- 3 ripe bananas, sliced into 1 1/2-inch chunks (about 2 cups of banana pieces)
- 2 large eggs, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 2 cups cake flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- For the streusel:
- 7 tablespoons all-purpose flour
- 1/3 cup granulated sugar
- 4 tablespoons unsalted butter, softened
Valentine Chex Mix

1. In large bowl, place cereal
- 9 cups Rice Chex® or Corn Chex® cereal
- 1 cup white vanilla baking chips
- 1/2 cup peanut butter
- 1/4 cup butter or margarine
- 3/4 cup powdered sugar
- 1/2 cup red, white and pink candy-coated chocolate candies
- 1/4 cup red or pink jimmies sprinkles
Foil Baked Fish with Black Beans and Corn

Adjust the oven rack to the lower-middle position and heat to 450 degrees
- 4 skinless white fish fillets (6 to 8 oz each), 1-inch thick
- salt and pepper
- 4 Tbs unsalted butter, softened
- 2 tsp minced chipotle chiles in adobo sauce
- 1 tsp grated orange zest
- 2 Tbs freshly squeezed orange juice
- 2 cloves garlic, minced
- 1 (16-oz) can black beans, rinsed and drained
- 2 cups corn kernels
- 1/2 red onion, minced
- 2 scallions, minced
- 1/4 cup chopped fresh cilantro
Shrimp Gumbo Casserole

In an iron skillet, saute onion and celery in oil
- Gumbo:
- 1 cup finely chopped onion
- 1 cup finely chopped celery
- 2 tablespoons olive oil
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1 teaspoon lemon-pepper seasoning
- 1 1/2 teaspoons House Seasoning, recipe follows
- 1 cup chicken or fish stock
- 1 (14 1/2-ounce) can diced tomatoes
- 10-ounce package frozen cut okra
- 2 cups shrimp, cleaned, peeled, and deveined
- Topping:
- 1 egg, beaten
- 1/3 cup milk
- 12-ounce package corn muffin mix
S'Mores Cake

- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 1/4 cup oil
- 1 box instant vanilla pudding mix
- 4 large egg yolks (save 2 whites for frosting)
- 2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1/2 cup milk
- 1 package graham crackers, finely ground
- 1 cup all purpose flour
- Toasted Marshmallow Frosting
- 2 large egg whites
- 3/4 cup granulated sugar
- 1/4 cup corn syrup
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- Chocolate Ganache
- 1/3 cup heavy cream
- 1 tablespoon unsalted butter
- 3 ounces coarsely chopped dark chocolate (you could use milk or semi-sweet)
Panko Crusted Crab Cakes with Roasted Pepper Chive Aioli

- * 12 ounces shelled cooked crab
- * 1/4 cup finely diced celery
- * 1/4 cup minced fresh chives
- * 1/4 cup mayonnaise
- * 1 large egg
- * 2 teaspoons Dijon mustard
