- zest and juice of 2-3 lemons (you’ll need 1/4 cup or 60ml of juice)

Preheat the oven to 375 degrees F
- 1 lb chicken breasts or thighs, or a mix of both
- 1 cup water
- 1/2 teaspoon cumin

- 1 (4 1/2-ounce) can chopped green chiles
- 1 cup frozen corn, thawed

- 1/2 teaspoon garlic powder
- 1 teaspoon chile powder
- 1 teaspoon freshly ground black pepper
- 12 medium sized flour tortillas
- 1/3 cup vegetable oil
- Sour cream and guacamole, for serving
Tropical Island Chex Mix

1. In large microwavable bowl, mix cereal, coconut, banana chips, tropical fruit mix and nuts
- 8 cups Rice Chex® cereal
- 1 cup shredded coconut, if desired
- 1 cup dried banana chips
- 1 package (7 oz) dried tropical fruit mix
- 1 jar (3 oz) macadamia nuts

- 1 tsp. vanilla extract
- coating chocolate:
- 1 cup milk chocolate chips
- 1 tsp. vegetable shortening
Peach Streusel Pie

1. Put an oven rack in the middle position and preheat oven to 350°
- 1/4 cup walnuts, finely ground in a food processor
- 1/4 cup pecans, finely ground in a food processor
- 1 cup flour
- 1/2 cup dark brown sugar
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter, melted

1. Fill a heavy-bottomed deep saucepan halfway with canola oil
- 1 1/2 cups all-purpose flour
- 3 Tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt

- 8 ounces ricotta cheese, well drained
