Spinach Dip

Combine and chill
- 1 Cup mayonaise
- 1 Cup sour cream or yougert
- 1 box Knorr vegetable soup
- 1 can sliced chopped water chestnuts
- 1 10oz package chopped spinach drained and squeezed well.
Burgundy Beef Ragout

Brown beef in butter in a large heavy pan
- 2 lbs lean stew meat
- 2 T butter
- 2 tsp Beau Monde
- 1 tsp Thyme
- 1/2 sm bay leaf
- 1 15oz can tomato sauce
- 1 4oz can button mushrooms
- 1 Cup burgundy or other dry red wine
- 1 Cup diagonally cut carrots
Mushroom Casserole

Beat 2 eggs and 11/2 Cup milk together
- Layer #1
- Combine 1 lb mushrooms sauted in butter
- 1/2 Cup green pepper minced
- 1/2 Cup celery minced
- 1/2 Cup minced onion
- add to sauted mushrooms and saute for a few min.
- Layer #2
- 3/4 tea salt
- 1/2 tea pepper
- 1/2 Cup mayonaise
- Layer # 3
- 21/2 Cups cheese and garlic croutons ( save some for top)
Lentil Soup

Soak 2 cups lentils in 6 cups water for 12 hrs or overnight
- 2 Cups lentils
- 1 lb bacon
- 1 cup celery
- 1 cup chopped onion
- 1/2 Cup bacon grease
- 2 pkg Geo Washington broth
- salt and pepper
Chili

Heat oil, brown meat lightly
- 2 lbs lean ground beef
- 1 T oil
- 3 cloves garlic minced
- 3 large stalks of celery cut fine
- 1 extra large onion minced
- 1 large green pepper cut fine
- 3 16oz cans tomatoes diced
- 1 16 oz can tomato sauce
- 1 T salt
- 1 T black pepper
- 2 T chili powder
- 1 sm can diced green chilis
- 1 tsp oregano
- 1/2 tea cumin
- 2 T sugar
- 3 16 oz cans kidney beans drained
Chicken Tarragon

Saute sliced mushrooms in 2 T butter until golden
- 1/2 lb fresh mushrooms
- 1/4 Cup butter
- 6 lg chicken breasts
- 2 tea beau monde
- 1/2 tea dried tarragon
- 1 Cup dry white wine
- 1 Cup sour cream
- 1/2 Cup chopped green onions
Chicken Cacciatoria

Sprinkle cut up chicken with salt and pepper
- 1 lg frying chicken
- 1/2 Cup olive oil
- 1 chopped onion
- 1 clove minced garlic
- 1/2 Cup mushrooms
- 1 can tomato paste
- 2 Cups water
- 1/2 Cup dry white wine
- 1 bay leaf
- 1/4 tea allspice
- 1/2 tea salt
Chicken Divan

Cook chicken and broccoli separately Place broccoil in bottom of well greased pan 7x11x13 Remove bones of chicken...
- 3 chicken breasts
- 2 10 pkg broccoli
- 2 cans cream of chicken soup
- 1 cup mayonaise
- 1 T lemon juice
- 1/2 tea curry
Cucumber Dip

Mix all together and chill before serving
- 1 Cup sour cream
- Lg T mayonnaise
- Cucumber ( cut in small pieces,
- salt ) Let stand and squeeze out
- water.
- Add salt, pepper and onion.
Chicken Casserole

Combine flour, salt and pepper in a paper bag
- 1 2 1/2 lb chicken cut up
- 1/4 Cup flour
- 2 tea salt
- 1 tea paprika
- 1/2 tea pepper
- 1/4 Cup oil
- 1/2 Cup milk
- 1 onion sliced
- 1 can cream of mushroom soup
