Pineapple Glazed Chicken

1) coat a large nonstick frying pan with nonstick cooking spray and place over medium heat
- 2 lbs boneless, skinless chicken breasts
- 3 in piece of fresh ginger (cut into 1/4-inch-thick slices)
- 2/3 C pineapple juice
- 2 tbsp reduced sodium soy sauce
- 1 tbsp sesame seeds
- 1 C pineapple chunks (cut into the triangle pieces)
- 3 green onions (thinly sliced, including green portions)
Sweet and Sour Meatballs

1. Mix the meatball ingredients and shape into small balls
- Meatballs:
- 2 lbs ground beef
- 1 slightly beaten egg
- 1 medium grated onion
- 1/2 tsp salt
- pepper to taste
- Sauce:
- 1 jar chili sauce
- 1 jar grape jelly
- 1 tablespoon lemon juice
Hummus with Roasted Garlic

1. Cut off the top of the garlic head, sprinkle with olive oil, salt and pepper and bake at 400 for 45 minutes
- 1 15oz can chickpeas, rinsed well and drained
- 1/3 cup WELL-STIRRED tahini
- 4 * tablespoons fresh lemon juice
- 4 * tablespoons extra-virgin olive oil
- 4 head of garlic
- 1 1/4 tsp cumin
- 5 tablespoons HOT water
- salt
- pepper
- Plus a little extra
Spicy Beef & Broccoli

Serve this simple and delicious beef and broccoli dish over rice and garnish with sesame seeds and sliced scallions
- 1 1/2 pounds skirt steak (can substitute flank steak or top round)
- 3 tablespoons cornstarch
- Salt and pepper
- 5 tablespoon sunflower or vegetable oil
- 2 pounds broccoli florets
- 1/2 teaspoon Kosher salt
- 1 cup low sodium chicken broth
- 1/2 cup oyster sauce
- 5 tablespoons dry sherry or rice wine
- 2 tablespoons low sodium soy sauce
- 3 tablespoon chili garlic sauce
- 1 teaspoon grated ginger
- 4 cloves garlic, minced
- 1 teaspoon grated ginger
- Sesame seeds
- Minced green onions
Blue Cheese, Chicken, Apple and Pecan Salad

1. Tenderize the chicken breast to thin
- 1 chicken breast
- 12 ounces salad greens (spring mix)
- 1/2 cup dried cherries
- 1/2 cup pecan halves
- 6 ounces blue cheese chunks
- 2 whole apples, cored and sliced very thin
- 1/4 cup extra virgin olive oil (plus an additional 1 tbsp)
- 1 tablespoon (heaping) Dijon
- 1 tablespoon maple syrup
- 1 teaspoon apple cider vinegar (or more to taste)
- Salt and freshly ground black pepper
- 1 tbsp balsamic vinegar
- 2 garlic cloves, minced
Zip Sauce with herbs

1. Melt butter in a small saucepan over medium heat
- 1/4 cup butter
- 1 teaspoon dried rosemary, crushed
- 1/4 teaspoon dried thyme, cracked
- 1/4 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1 tablespoon Dijon mustard
- 1/2 teaspoon coarsely ground pepper
- 1-1/2 tablespoons Worcestershire sauce
- 1/4 teaspoon dried cumin
- 1/8 teaspoon cayenne pepper
- 1/3 cup beef drippings
Beef Stew with Mushrooms, Onions and Beer

1. In a large pot, heat oil over high heat
- 2 tbsp evoo
- 3 lb beef chuck, cut into chunks
- salt and pepper to taste
- 2 large onions halved and thinly sliced
- 5 carrots cut into 2 inch diced
- 1/4 lb prosciutto or pancetta chunked
- 2 tbsp chopped garlic
- 1 1/2 lb sliced mushrooms
- 12 oz beer (Puddy's Porter if available)
- 2 C beef stock or more if necessary
- 1 tsp dried thyme
- 3 bay leaves
- 1 tsp Worcestershire sauce
Garlic Mashed Potatoes

1. Cut the tops off the garlic bulbs
- 2 1/2 lbs red potatoes
- 4 whole garlic bulbs
- 1 tbsp butter
- 1 splash milk
- salt

Basil Grilled Chicken

Smothered in butter and basil, this chicken could not be any better!
- 3/4 tsp coarsely ground black pepper
- 4 skinless chicken breast halves
- 1/4 C freshly chopped basil leaves, plus 2 tbsp freshly minced basil leaves
- 1/3 C (5 tbsp) butter, melted
- 1/4 C butter, at room temperature
- 1 tbsp grated Parmesan
- 1/4 tsp garlic powder
- 1/8 tsp salt
- 1/8 tsp pepper
Tortilla Soup

1. Rinse black eye peas and pinto beans with luke warm water in a large pot
- 1 red bell pepper, diced
- 1 14-oz can diced tomatoes, reduced sodium
- 3 14-oz cans low sodium chicken broth
- 1 tsp garlic powder
- 1/4 tsp pepper
- 1 yellow onion, diced
- 1 small can green chiles
- 1/2 C uncooked black eyed peas
- 1/2 C uncooked pinto beans
- 1 16 oz can red kidney beans
- 3 packets mild taco seasoning
- sante fe tortilla chips
- 1 - 2 chicken breasts (to use in southwest salad)
