Garlic Mashed Potatoes
- 2 1/2 lbs red potatoes
- 4 whole garlic bulbs
- 1 tbsp butter
- 1 splash milk
1. Cut the tops off the garlic bulbs. Drizzle with evoo, salt and pepper. Roast garlic cloves at 400 for 45 minutes until soft.
2. Clean potatoes, cut into cubes and cook until soft.
3. Squeeze soft garlic out of the skin.
4. Combine potatoes, garlic, milk, butter, salt and pepper in a bowl and whip with a hand mixer until desired consistency.
5. Add extra salt, pepper and/or butter to taste.
