Churrasco Skirt Steak Cuban-Style with Marinade Recipe

Jorge Castillo: This is the dish we made for Keith Famie of the Food Network when he came to Miami
- Beef skirt steak cut in long steaks (about 3/4 pound per person or more)
- Cuban Churrasco (Mojo) Marinade
- 3 heads garlic -- about 30 to 40 cloves
- 2 teaspoons salt
- 1 teaspoon black peppercorns
- 1 and 1/2 cups sour orange juice
- (If you can't get sour orange juice in your area, use two parts orange to one part lemon and one part lime)
- 1 cup minced onion
- 2 teaspoons oregano
- 1 cup Spanish olive oil
- Cuban Chimichurri Sauce
- 1 large bunch of cilantro leaves
- 8 cloves garlic
- 1/4 cup vinegar
- Juice of one lime
- 2/3 cup olive oil
- 1/2 cup onion
- Dash or two of red pepper flakes
- Salt and Pepper to taste

- 8 cups bagged prewashed baby spinach (about 8 ounces)
- 1 large, firm, sweet-tart apple, cored and thinly sliced

Crimson Spice Champagne Cocktail

- PREP AND COOK TIME: About 1 1/4 hours, plus at least 2 hours to cool and chill syrup
- NOTES: For a nonalcoholic alternative, substitute lemon-lime or club soda for the cognac and Champagne. If making syrup up to 1 week ahead, chill airtight

- 8 slices (quarter size and about 1/8 in. thick) peeled fresh ginger
- 2 cinnamon sticks (about 3 in. long)
- 2 whole star anise
- 1/3 cup cognac or brandy
- 8 cups Champagne or other sparkling wine (about 2 2/3 bottles, 750 ml. each), chilled
- 32 to 48 fresh cranberries, rinsed, or frozen cranberries (optional)

Granita Di Caffe Con Panna

- 2 Measuring cups of Fresh-Brewed Espresso (Substitute reg. coffee or decaf if preferred)
- 2 Tbsp. Sugar
- 1/2-3/4 cup Heavy Cream whipped to soft peaks with a little vanilla or cinnamon and 1/2 Tbsp sugar ( you may have some left over but this will give you plenty to work with)
- Good dense dark chocolate – grated or shaved
