Bruschetta with White Beans, Sun-dried Tomatoes and Basil

- For the beans:
- 3/4 * 3/4 cup cannelloni beans
- 1/4 * 1/4 cup extra-virgin olive oil
- 1 * 1 garlic clove, peeled
- 1 * 1 bay leaf
- 1/2 * 1/2 teaspoon salt
- For the bruschetta and topping:
- 1 * 1 small baguette, sliced into thick pieces
- 1 * 1 tablespoon thinly sliced garlic, plus 1 garlic clove, peeled, for coating bread
- 2 * 2 tablespoons extra-virgin olive oil
- 1/2 * 1/2 teaspoon chili flakes
- 8 to 10 * 8 to 10 basil leaves
- 1/3 * 1/3 cup oil-packed sun-dried tomatoes, drained and sliced 1/4-inch thick
- 2 * 2 tablespoons chopped fresh parsley
- * Lemon juice
- * Salt and fresh black pepper
- 2 * 2 ounces ricotta salata cheese, grated large
Crab Cakes

Combine all ingredients. Form into balls
- 2 14 oz cans lump crabmeat
- 1 heaping tbsp dijon mustard
- 1 heaping tbsp mayonnaise
- 1 heaping tbsp horseradish sauce
- 2 eggs
- 2/3 cup chopped fresh parsley
- 1/2 sleeve ritz crackers, crushed
- salt and pepper
Fillet of Sole with White Grapes

Preheat oven to 350-degrees
- 2 sole fillets
- 1 tbsp butter
- 1/4 lb mushrooms, sliced
- 24 seedless grapes, halved
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- Juice of 1/2 lemon
Mushroom Croustades

In a heavy skillet, saute shallots in butter for 1 min
- 3 tbsp shallots, minced
- 1/4 cup butter
- 1/2 lb fresh mushrooms, finely chopped
- 2 tbsp sifted flour
- 1 cup heavy cream
- 11/2 tbsp chives, minced
- 1 tbsp fresh parsley, minced
- 1/2 tsp lemon juice
- 1/2 tsp salt
- 1/2 tsp cayenne peppe
Red Pepper Dip

Saute onion and garlic in 1 tbsp olive oil
- 1 med spanish onion, sliced and chopped
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 3 red bell peppers, sliced and chopped
- 2 tbsp tomato paste
- 1 tbsp balsamic vinegar
- French bread, sliced and toasted
Sweet Pumpkin Ravioli with Herbed Cream Sauce

Ravioli: In a bowl, combine all ingredients except wonton wrappers
- Ravioli:
- 1 cup canned pumpkin
- 1 cup cooked and mashed sweet potato
- pinch freshly grated nutmeg
- dash salt
- 1/4 tsp white pepper
- 72 wonton wrappers
- Sauce:
- 4 oz cream cheese, softened
- 1/2 cup low fat yoghurt
- 1/2 cup skim milk
- 1 tbsp sifted flour
- 1 tbsp minced fresh basil
- 1 tbsp minced fresh thyme or 1/4 tsp dried
- 1/4 tsp salt
- white pepper to taste
- 1/2 cup parmesan cheese
Shrimp with Coconut Curry

Heat large skillet, add oil and saute shrimp until they turn pink, about 3 min
- 2 tbsp vegetable oil
- 1 lb peeled raw shrimp
- 1-14 oz can chicken broth
- 3 tbsp cold butter
- 1 tbsp mild curry powder
- 3 tbsp cream of coconut
Lamb Meatballs in Greek-Inspired Tomato Sauce

- TOTAL TIME
- 30 minutes
- 1 1/2 pounds ground lamb
- 1 large egg
- 1/2 cup crumbled feta cheese
- 1/3 cup bread crumbs
- 3 tablespoons chopped parsley
- 2 tablespoons tomato paste
- 2 tablespoons milk or water
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 to 2 tablespoons olive oil
- 1 cup coarsely chopped onions
- 1 medium green pepper, seeded and coarsely chopped
- 1/2 cup dry red wine or dry vermouth
- 1/2 cup water
- 1 can (28 ounces) crushed tomatoes in purée (or substitute a 28-ounce can of plum tomatoes, including liquid, combined with a 6-ounce can of tomato paste)
- 1/2 to 1 teaspoon garlic powder
- 1/3 cup pitted, chopped kalamata olives
- 1/4 cup crumbled feta cheese, plus more for garnish
- 1/4 cup chopped parsley
- 1/4 to 1/2 teaspoon crushed red pepper
- 1 teaspoon dried oregano
- 1/8 to 1/4 teaspoon ground cinnamon
- 1 to 2 teaspoons sugar (optional)
- Salt and freshly ground pepper
Rosy Meatballs

Combine first 6 ingredients
- 1 lb ground beef
- 1/2 cup cracker or bread crumbs
- 1 egg, beaten
- 1 tsp instant minced onion, rehydrated
- 1/4 tsp dry mustard
- salt and fresh ground black pepper
- 1-16 oz can whole berry cranberry sauce
- 1-8 oz can tomato sauce
Roasted Chestnut Bisque

- 1 lb cooked and shelled chestnuts
- 2 tsp cold butter
- 1 lb leeks, sliced
- 1 carrot, chopped
- 3/4 cup light cream
- 21/2 cups chicken stock
- 1/2 cup marsala wine
- 1/2 tsp pepper
- 1/4 tsp nutmeg
- 3/4 cup sour cream
