- 2 cups sugar
- 12 tablespoons unsalted butter, at room temperature
- 3 large eggs
- 1 cup plus 1 tablespoon cake flour
- 1 cup plus 1 tablespoon all-purpose flour
- 2 teaspoons baking powder
- Pinch of kosher or sea salt
- 3/4 cup whole milk
- 3/4 teaspoon pure vanilla extract
- 3 medium baking apples, peeled, cored, halved, and thinly sliced
- 3/4 cup heavy cream
- 1 1/2 teaspoons ground cinnamon

- For the Sauce:
- 1 large bunch parsley, roughly chopped (about 1 1/2 cups)
- 1/2 cup chopped fresh dill
- 2 shallots, roughly chopped
- 3 cloves garlic, chopped
- 1 tablespoon red wine vinegar
- 1/3 cup extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- For the Fish:
- Two 15-ounce cans white beans, drained, rinsed and blotted dry
- Four 5-ounce cod or haddock fillets
- Salt
