MAKES 6 BURGERS

  • FOR THE BURGERS
  • 1/3 cup olive oil
  • 4 cloves garlic, finely chopped
  • 1 small carrot, finely chopped
  • 1 small yellow onion, finely chopped
  • 1 rib celery, finely chopped
  • 2 cups baby arugula, blanched, shocked, finely chopped, and squeezed dry
  • 1 (15-oz.) can great northern or cannellini beans, rinsed, drained and mashed (I mash in food processor after making breadcrumbs, after mashed add egg to blend)
  • 2 cups cooked quinoa
  • 1/2 cup breadcrumbs
  • 2 tbsp. oregano leaves, finely chopped
  • 1 egg
  • Kosher salt and freshly ground black pepper, or additional spice, to taste
  • Options: diced cheese (feta, fontina)
  • FOR THE RELISH
  • 1/4 cup finely chopped parsley
  • 2 tbsp. fresh lemon juice
  • 1 tsp. ground cumin
  • 2 red bell peppers, roasted, stemmed, seeded, peeled, and finely chopped
  • 1/2 small yellow onion, minced
  • 6 hamburger buns, split and toasted
