Quinoa Veggie Burger with Roasted Red Pepper Relish

MAKES 6 BURGERS
- FOR THE BURGERS
- 1/3 cup olive oil
- 4 cloves garlic, finely chopped
- 1 small carrot, finely chopped
- 1 small yellow onion, finely chopped
- 1 rib celery, finely chopped
- 2 cups baby arugula, blanched, shocked, finely chopped, and squeezed dry
- 1 (15-oz.) can great northern or cannellini beans, rinsed, drained and mashed (I mash in food processor after making breadcrumbs, after mashed add egg to blend)
- 2 cups cooked quinoa
- 1/2 cup breadcrumbs
- 2 tbsp. oregano leaves, finely chopped
- 1 egg
- Kosher salt and freshly ground black pepper, or additional spice, to taste
- Options: diced cheese (feta, fontina)
- FOR THE RELISH
- 1/4 cup finely chopped parsley
- 2 tbsp. fresh lemon juice
- 1 tsp. ground cumin
- 2 red bell peppers, roasted, stemmed, seeded, peeled, and finely chopped
- 1/2 small yellow onion, minced
- 6 hamburger buns, split and toasted

- 1 canned chipotle chile in adobo plus 1 teaspoon adobo sauce (see Cook Tips)
- 1 clove garlic, minced
- 1/2 cup orange juice
- 3 tablespoons lime juice
- 1 tablespoon red-wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper

- 1/2 cup water
- 1/2 cup instant brown rice
- 2 teaspoons sesame oil
- 1 pound 93%-lean ground turkey
- 1 tablespoon minced fresh ginger
- 1 large red bell pepper, finely diced
- 1 8-ounce can water chestnuts, rinsed and chopped
- 1/2 cup reduced-sodium chicken broth
