Citrus Doodles

Like a snickerdoodle but with citrus not cinnamon
- 2-3/4 cups flour
- 1 tblsp. Baking powder
- 1/2 tsp salt
- 1 cup butter
- 1-1/2 cups sugar
- 1 tblsp orange zest
- 2 tsp lemon zest
- 2 eggs
- GLAZE
- 1 tblsp orange zest
- 2 tsp lemon zest
- 2-1/2 cups powdered sugar
- 3 tblsp orange juice
- 3 tblsp lemon juice
Mushroom Burgers

Put 2 tblsp olive oil in a large sauté pan
- 1-1/2 lbs chopped mushrooms
- 1 chopped onion
- 1/2 tsp chili flakes
- 6 cloves chopped garlic
- 1/2 cup grated beets or carrots
- 3/4 cup bread crumbs
- 3/4 cups Parmesan cheese
- 1/3 cup chopped parsley
- 3 tsp beef or veg bouillon base
- 2 eggs
- 3/4 cup quick oats
Cafe Mingo Sugo di Carne

- 5 lb beef bottom round, cut into 2" pieces
- 1 cup unsalted butter
- 1 bottle chianti
- 3 sweet red onions,sliced
- 1 28 oz can peeled tomatoes
- 1 cup espresso
- Salt and pepper to taste
Eggplant & Chickpea Stew

- 1 ounce dried porcini mushrooms
- 3 cups hot water
- 2 large eggplants (about 1 1/2 pounds each)
- 3 tablespoons extra-virgin olive oil, divided
- 2 large onions, thinly sliced
- 6 cloves garlic, minced
- 2 teaspoons dried oregano, crumbled
- 1 small (1-inch) cinnamon stick
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1 bay leaf
- 1 cup dried chickpeas, rinsed and soaked overnight (for a quick-soak method, see Cooking Tips) and drained
- 1 28-ounce can tomatoes (see Cooking Tips), drained and coarsely chopped
- 1/4 cup finely chopped fresh parsley
Pistachio- Orange Biscotti

Sift flour, bkg soda, bkg powder, and salt
- Options:
- 1 3/4 cups flour
- 1/2 tsp bkg soda
- 1/2 tsp bkg powder
- 1/4 tsp salt
- 1/2 cup butter
- 1 cup sugar
- 2 tblsp grated orange zest
- 1 tsp vanilla
- 1/2 tsp orange extract
- 2 eggs
- 1 1/2 cups pistachio
- Can add cranberries at Christmas and dip the bottom in melted white chocolate.
Honey Soy Salmon

A sweet, tangy and salty mixture of soy sauce, rice vinegar and honey does double-duty as marinade and sauce
- 1 scallion, minced
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon minced fresh ginger
- 1 pound center-cut salmon fillet, skinned (see Tip) and cut into 4 portions
- 1 teaspoon toasted sesame seeds (see Tip)

- 1-1/2 cups powdered sugar
- 1 cup butter
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1 egg
- 2-1/2 cups all purpose flour
