Taco spaghetti to die for

Heat olive oil in a large stockpot or duch oven over medium heat
- 1 Tbsp of olive oil
- 1 lb of ground bee (ground turkey)
- 1 (1.25 oz) package of taco seasoning
- 1 ( 10 oz can) ro-tel mild diced tomatoes and green chilies
- 1 tablespoon tomato paste
- 8 oz of spaghetti
- 1/2 cup of shredded cheddar cheese
- 1/2 cup of shredded mozzarella cheese
- 1 roma tomato, diced
- 2 tablespoons chopped fresh cilantroleaves
Brown sugar bacon wrapped little smokies

prepare a jelly roll or large baking sheet with a rim, with a layer of aluminu, foil, lightly coated with nonstick
- 1 16 oz package of lil smokies sausages (hillshire farms)
- 15 slices of bacon each cut into 3 smaller sections
- 1/4 cup light brown sugar packed
- 1/4 tsp cayenne pepper ( I only use a pinch)
- pinch of black pepper
Dina's tossed mushrooms

Preheat oven to 350 degrees
- 1 lb white button mushrooms
- 2 tbsp. of water
- 1/4 cup dried Italian-style breadcrumbs
- 2 tablespoons parmigiano Reggiano cheese (grated)
- 2 tablespoons of thyme (fresh or dried)
- 1 clove of garlic ( minced)
- 1/4 tsp of kosher salt
- black pepper to taste
- 2 tbsp. olive oil to drizzle
- olive oil spray
Easy Fried Rice

Preheat a large skillet or wok to medium heat
- 3 cups of cooked rice
- 2 tablespoons of sesame oil
- 1 small white onion chopped
- 1 cup of frozen peas and carrots thawed
- 2 - 3 tablespoons soy sauce more or less to taste
- 2 eggs beaten lightly
- 2 tbsp. chopped green onions optional
Easy Nachos

Preheat oven to 350 degrees
- 1 standard size bag of tortilla chips
- 1 lb block of cheese such as cheddar Monterrey jack or Colby jack, shredded
- Optional topping such as
- seasoned ground beef
- shredded beef, pork, or chicken
- black beans or pinto beans
- tomatoes jalapnos or chilies
- corn black olives, avocados
- use as little or as much as you like of toppings
Creamy brussel sprouts with bacon

Cook chopped bacon in a large skillet over medium heat until very crisp, about 3 to 4 minutes per side
- 10 slices of bacon (chopped)
- 2 tablespoons of butter
- 1 tbsp. of olive oil
- 2 lbs of brussel sprouts (trimmed and cut in half)
- salt and pepper to season
- 2 tsp of garlic powder
- 1 tsp of onion powder
- 1 tsp of dried thyme
- 1.5 cups of heavy cream
- 1/2 cup of mozzarella sherdded
Fried Clams, New England Style

Pick through the clams to make sure there are no bits of shell or obvious grit
- 1 lb shucked clams, cherrystones, littlenecks, or western littlenecks or manila clams
- 1 cup of corn flour as in fish fry mix
- 1 up of all purpose flour
- 1 tsp salt
- 1 tsp of freshly ground black pepper
- 1/2 tsp of cayenne pepper
- 1 cup of buttermilk or evaporated milk
- oil for frying
Garlic Butter Mushrooms

Preheat oven to 375 degrees
- 4 Tbsp melted butter
- 2 cloves of garic minced
- 2 tsp freshly chopped thyme
- 1 tsp balsamic vinegar
- Kosher salt
- Freshly ground black pepper
- 1 1/2 lb crimini mushrooms cleaned
Crispy Parmesean Potatoes

Pour butter onto the bottom of a 9 x 13 baking pan
- 6 - 8 Yukon gold potatoes, halved lengthwise
- 1/4 cup salted butter
- 3/4 cup Parmesaan cheese (grated)
- 1 tsp ground black pepper
Garlic Pizza Bread

Scoop out the middles from both halves of the bread to create shallow boats
- 1 large loaf halved
- 1 15 oz jar pizza sauce
- 3 cups of shredded mozzarella
- 1/3 cup of pepperoni
- 1/4 cup black olives
- 1/2 red onion cut into thin moons
- 1 green bell pepper , chopped
- pinch of crushed red pepper flakes
