Chili Cornbread Casserole

To prepare chili: Heat oil in a Dutch oven over medium heat
- For Cornbread:
- 1 tbsp canola oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 lb lean ground beef
- 2 (15oz)cans kidney beans, rinsed
- 1 (28oz) can crushed tomatoes, undrained
- 3 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp sweet paprika
- 1/4 tsp cayenne pepper (optional)
- 1 1/4 cups cornmeal
- 3/4 cup whole-wheat flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg, lightly beaten
- 1 1/4 cups low-fat milk
- 2 tbsp canola oil
- 1/2 cup chopped fresh cilantro
- 1 1/2 cups shredded extra-sharp cheddar cheese

1. This recipe calls for all measurements to be level
- 2 cups sifted cake flour
- 3 tsp baking powder
- 1/2 cup butter, softened
- 1 cup sugar
- 3 egg yolks, beaten until thick and lemon colored
- 3/4 cup milk
- 1 tsp vanilla OR 1/2 tsp orange extract
Rummy Mummy Cocktail

1. In a pitcher, mix rum, vodka, hazelnut liqueur and half and half; stir to mix
- 2 3/4 cups coconut flavored rum
- 3/4 cup vanilla vodka
- 3/4 cup hazelnut flavored liqueur
- 1 1/2 qts half and half
Pizza Roll-Ups with Dipping Sauce

1. Heat oven to 400F. Mix butter and seasonings until well blended
- 2 tbsp butter, melted
- 1/4 tsp italian seasoning
- 1/4 tsp garlic powder
- 1 can refrigerated pizza crust
- 1 cup shredded mozzarella cheese
- 1 pkg turkey breast deli meat
- 1 1/2 cups marinara sauce
Egg in Toast

1. Cut large oval out of middle of each slice, leaving about 1/2" border
- 1 loaf focaccia bread (1 lb) OR: 1 round loaf bread (8")
- Unsalted butter, at room temperature
- 6 eggs
- salt
- black pepper
- 1 cup shredded taco-flavored cheese blend (4 ounces)
Cheese Stuffed Italian Meatloaf

1. Over low heat, using a little olive oil, saute onions, celery, & garlic until tender
- 3 lb ground beef
- 16 oz italian sausage, sweet
- 1/2 cup celery, minced
- 1/2 cup sweet onion, finely chopped
- 4 clove garlic, minced
- 1 cup mushrooms, chopped
- 1/2 cup crackers, finely crushed
- 1 cup sundried tomatoes
- 1 tbsp mustard, bold & spicy
- 2 tbsp worcestershire sauce
- 2 eggs
- 1 tsp granulated garlic
- 1 tsp italian seasoning
- 1 tsp dried basil
- 1/2 tsp black pepper
- 8-10 slicces bacon, cut in half
- 2 pkg budding ham slices ( or proscutto)
- 6-8 oz provolone. grated
- 6-8 oz parmesan, grated
Creamed Chicken and Corn Soup

- 12 oz skinless, boneless chicken thighs
- 1 26oz can condensed cream of chicken soup
- 1 can cream-style corn
- 1 can reduced-sodium chicken broth
- 1 cup chopped carrot (2 medium)
- 1 cup finely chopped onion (1 large)
- 1 cup frozen whole kernel corn
- 1/2 cup chopped celery (1 stalk)
- 1/2 cup water
- 2 slices bacon, crisp-cooked, drained, and crumbled
