Great Grandmas Porridge

Place all ingredients in a medium saucepan
- 1 cup sunny boy cereal
- 1 cup quick cooking oats
- handfull raisins
- handfull chopped dates
- 1 teaspoon salt
- 6 cups water
Mexican roast chicken & tomato soup

1.Heat oven to 200C/180C fan/gas 6
- 1 1/2 kg ripe tomatoes, halved vertically
- 2 onions, cut into wedges
- 1 medium chicken, jointed into pieces
- 2 tbsp olive oil, plus extra for shallow frying
- 3 garlic cloves, roughly chopped
- 3 red chillies, deseeded and roughly chopped
- 1 tbsp coriander seed, crushed
- 400g can pinto or black beans, drained and rinsed
- zest and juice 1 lime
- 4 tbsp chipotle paste
- 3 corn tortillas, cut into triangles
- large handful coriander, chopped
- 2 avocados, stoned, peeled and cut into bite-sized pieces
- 200 ml soured cream (optional)
Asian Salad Bowls

Stir fry chicken. Cook the rice noodles and set aside
- 340 g chicken breast, thinly sliced
- 3 cups cooked rice noodles
- 2 cups carrots, grated or julienned
- 2 cups cucumber, julienned or sliced
- 2 cups yellow or red pepper, thinly sliced
- 1/2 cup green onion, diced
- 1/2 cup peanuts, crushed
- VINAIGRETTE
- 1 Tbsp peanut butter
- 1/2 cup rice wine vinegar
- 2 Tbsp soy sauce
- 2 Tbsp hoisin sauce
- 2 tsp sugar
- 2 tsp ginger root, grated or minced
- Hot chili peppers (opt)
HP Sauce

Cook onions, garlic, ginger and vinegars until soft
- 3 quarts mashed plums
- 3 quarts applesauce
- 2 large onions, chopped
- 1 pint malt vingegar
- 1 pint while vingegar
- 1/4 cup salt
- 2 Tbsp. fresh ginger chopped
- 7 cloves garlic, chopped
- 1 tsp. cayenne pepper
- 1 1/2 tsp. chili powder
- 2 tsp. nutmeg
- 1 Tbsp. dry mustard
- 2 1/4 cups brown sugar
- 1 cup tamarind paste
- 1 cup molasses
- 1 litre bottle HP Sauce
Crunchy Almond-Crusted Chicken

1. Sprinkle each side of the chicken breast with cornstarch
- 5 oz boneless, skinless chicken breast
- 1 Tbsp cornstarch
- 1/4 c fat-free egg substitute
- 2 Tbsp finely chopped almonds
Smokey Chipotle Meatloaf

1 Preheat an oven to 350 degrees F (175 degrees C)
- +2 eggs
- +1/3 cup hickory flavored barbeque sauce
- +2 cloves garlic, minced, or to taste
- +2 chipotle chilies in adobo sauce, minced, or to taste
- +2 tablespoons adobo sauce from chipotle peppers
- +1 teaspoon kosher salt
- +1 teaspoon coarse ground black pepper
- +1/2 teaspoon celery salt
- +1/2 teaspoon ground cumin
- +1 tablespoon Worcestershire sauce
- +1 onion, chopped
- +1/2 cup dry oatmeal
- +2 pounds lean ground beef
- +2 tablespoons hickory flavored barbeque sauce

Apple Pie Dip

You can either cook this on the stove-top or the microwave
- 2 cups Apples (peeled, cored & diced)
- 2 tbsp Lemon Juice
- 3 tbsp Brown Sugar
- 1/4 tsp Cinnamon
- 1 tsp Cornstarch (dissolved in 1 tsp water)

- 5 (6-inch) wheat tortillas
- 2 tablespoons butter, melted
- 1/2 teaspoon cinnamon
