Smothered Pork Chops

Trim fat and brown pork chops
- 4-6 Pork Chops
- 1/2 cup OXO Chicken
- 1/4 cup Honey (melted)
- 1/4 cup Soy Sauce
- 2 Tbsp. Ketchup
- 1/2 tsp. Ginger
- Garlic Salt
Spring Vegetable Ragout - Crock Pot

Heat oil in large skillet over medium heat
- 1 Tbsp. olive oil
- 2 leeks, thinly sliced
- 3 cloves garlic, minced
- 3 cups cherry tomatoes, halved
- 1 2/3 cups frozen corn
- 8 oz yellow zucchini, halved lengthwise and cut into 1/2 inch pieces
- 1 cup vegetable broth
- 1/2 cup frozen shelled edamame
- 1 pkg. 4 oz. shredded carrots
- 1 tsp. dried tarragon
- 1 tsp. dried basil
- 1 tsp. dried oregano
- salt and black pepper

Gruyere Mashed Potatoes

1. Place potatoes in a Dutch oven and cover with water
- 2 pounds potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/3 cup milk
- 1/4 cup butter, cubed
- 1/4 cup shredded Gruyere or Swiss cheese
- 1/4 cup chopped green onions
- 1/4 cup minced chives
- 1 teaspoon minced garlic
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
Stuffed Mushroom Dip

1 Preheat oven to 350°F. 2 In a large sauté pan over high heat, add a drizzle of olive oil
- extra virgin olive oil
- 1/2 pound sweet Italian sausage
- 1 pound cremini mushrooms (chopped into small pieces)
- 1/2 yellow onion (finely diced)
- 1 clove garlic (minced)
- 1 tablespoon thyme (chopped)
- salt and freshly ground black pepper
- 1/2 cup cream cheese (cut into cubes)
- 1/2 cup sour cream
- 2 cups shredded gruyere (divided)
- 1/2 cup panko bread crumbs
Oven BBQ Potatoes

Basic and mellow flavors. A perfect structure, soft potatoes with a crunchy bottom layer
- 1 1/2 pound potatoes (equal sized)
- 1 grated garlic clove or 1/4 to 1/2 tsp garlic powder
- chicken or vegetable broth
- tiny cubes butter
- minced parsley
- pepper and salt
Churros

Combine water, salt, sugar and butter in a pan
- 1 cup water
- 1/4 tsp. salt
- 1 tsp. granulated sugar
- 1/2 cup butter or margarine
- 1 cup flour
- 4 eggs
- 1/4 tsp. lemon extract
- oil for deep frying
- sugar/cinnamon mixture
Tamarind Sauce

Break the lumps of tamarind into small pieces & boil with 1 1/2 cups water 10-20 minutes until softened
- 3 oz. tamarind
- 2 cups water
- 1 cup chopped pitted dates
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
- 1/8 tsp. cayenne pepper
Pork Satay

Cut the pork thinly into 2 inch strips
- 1 pound lean pork
- 1 teaspoon ginger root, grated
- 1 stalk lemon grass, finely chopped
- 3 cloves garlic, finely chopped
- 1 tablespoon medium curry paste
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 4 tablespoons coconut cream
- 2 tablespoons fish sauce
- 1 teaspoon sugar
- 20 wooden skewers
- oil for cooking
- SATAY SAUCE
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 3 ounces crunchy peanut butter
- 3 tablespoons brown sugar
- 2 tablespoons tamarind juice
- 1 tablespoon fish sauce
- 1 teaspoon salt
Cumin & Onion Marinated Beef

1.Cut the steak into 6 or 7 chunks
- 1 kg beef steaks
- 2 tbsp Worcestershire sauce
- 3 garlic cloves, crushed
- juice 2 limes
- 2 tbsp red wine vinegar
- 1 tbsp cumin seed
- 1 tbsp chilli flakes
- 1 small onion, grated
- 2 tbsp olive oil, plus extra for drizzling
Thai Pork Chop Marinade

Mix everything together and coat your pig in the stuff
- 1/2 cup dry white wine
- 1/4 cup lime juice
- 1 tbsp grated fresh ginger
- 1 tbsp garlic, minced
- 1 hot chile, minced and seeded (Thai, if you can get it)
- 1 tbsp honey
- 1 tbsp salt dissolved in a bit of water (instead of soy sauce)
