1. Rub the steaks with the pepper
- 4 - 10 ounce Sterling Silver New York Striploin steaks
- 2 tbsp. freshly ground Tellicherry pepper, or black pepper
- 2 tbsp. olive oil
- 2 tbsp. unsalted butter
- 3 large shallots, chopped fine
- 2 tbsp. Worcestershire sauce
- 1/4 cup beef stock
- 2/3 cup heavy cream (whipping cream)
- 1/4 cup sweet sherry or port
- 1/4 cup fresh snipped chives
Cashew Pear Milk

A vegetarian substitute for milk or cream
- 1 cup raw cashews
- 1 cup hot water
- 1/4 tsp. salt
- 1 tsp. vanilla
- 2 Tbsp. honey
- 2 cups pear juice
- 1 1/2 cups canned pears.
Crab & Shrimp Stuffed Dijon Crusted Sole

1. In a small bowl, combine the mayonnaise, 1 tablespoon cheese, lemon juice, mustard and horseradish
- 8 sole fillets (2 ounces each)
- Stuffing
- 1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
- 1/2 cup chopped cooked peeled shrimp
- 1/4 cup soft bread crumbs
- 2 tablespoons butter, melted
- 2 tablespoons whipped cream cheese
- 2 teaspoons minced chives
- 1 garlic clove, minced
- 1 teaspoon grated lemon peel
- 1 teaspoon minced fresh parsley
- Topping
- 3 tablespoons reduced-fat mayonnaise
- 2 tablespoons grated Parmesan cheese, divided
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon horseradish
- 1/4 cup dry bread crumbs
- 2 teaspoons butter, melted
Spicy Black Bean Cakes

1. Heat 1 tablespoon olive oil in a small skillet over medium heat

- +4 green onions, thinly sliced
- +6 cloves garlic, pressed
- +2 fresh jalapeno peppers, finely diced

- +2 (14.5 ounce) cans black beans, drained and rinsed

Multi Layered Salad

- 1 medium head lettuce with some spinach or romaine mixed in
- 1 cup celery, sliced
- 6 hard boiled eggs, chopped
- 10 ounces frozen peas, thawed
- 1/2 cup green pepper, chopped

- 6 ounces water chestnuts, thinly sliced
- 8 bacon slices, cooked and crumbled

- 1 cup sour cream
- 2 tablespoons sugar

Cauliflower Masala

- Cauliflower: 1 small medium.
- Jeera/Cumin: 1/2 tsp.
- Onion: 1/2 of a medium sized, chopped.
- Ginger: 1 small piece, grated.
- Garlic: 3 or 4 cloves, slit.
- Kashmiri Chilly Powder: 1 tsp.
- Coriander powder: 3/4 tsp.
- Garam masala powder: 3/4 tsp.
- Turmeric powder: 1/4 tsp.
- Amchur/Dry mango powder: 1/2 tsp.
- Refined oil: 1 tbsp.
- Water: 1/4 cup.
- Salt about 1/2 tsp.
- Coriander leaves: A bunch, chopped.

- 1 green pepper, cut into 1" cubes
- 1 red pepper, cut into 1" cubes
- 2 green onions, cut into 1" pieces
- 2 pineapple rings, cut in 1/2" pieces
- 1 1/2 teaspoons cornstarch
- 1 tablespoon water
