Jicama Appetizer

Arrange the jicama on a platter
- 1 jicama, peeled and cut into bite-sized pieces
- 2 tablespoons fresh lime juice
- 2 tablespoons chili powder

Steamed Carrots with Garlic-Ginger Butter

- 1 pound baby carrots with tops, peeled
- 1 tablespoon butter
- 1 teaspoon minced peeled fresh ginger

- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
Broccoli with Creamy Parmesan Sauce

Trim 1/2 inch off broccoli stalks; remove the tough outer layer with a vegetable peeler
- 1 pound broccoli
- 1 tablespoon all-purpose flour
- 1 cup nonfat milk, divided
- 1/2 cup freshly grated Parmesan cheese
- 1/4 teaspoon salt
- Pinch of ground white pepper
- Pinch of ground nutmeg, (optional)
Loaded Baked Potato Salad

Taste great hot out of the oven or "room temperature
- 8 potatoes, cubed (half peeled or half with skin)
- 2 teaspoons salt
- 6 slices bacon, diced & crisp cooked
- 6 green onions
- 2 cups cheddar cheese, shredded
- 16 ounces sour cream
- 1/4 teaspoon pepper
- 1 cup mayonnaise
Flax Seed Egg Substitute

Pulled Chicken Sandwhiches with Root Beer BBQ Sauce

In 2-quart saucepan, heat all sauce ingredients to boiling over medium heat, stirring frequently

- 1/2 cup root beer
- 1/2 cup ketchup
- 3 tablespoons cider vinegar
- 2 tablespoons yellow mustard
- 1 tablespoon packed brown sugar
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/8 teaspoon ground ginger
- 1 clove garlic, smashed
- Dash of red pepper sauce
- Sandwiches
- 1 deli rotisserie chicken (unflavored), skin and bones removed, shredded (about 3 cups)
- 4 kaiser rolls, split
- 2 cups purchased coleslaw
Barbecued Rice

1. Prepare the smoker for barbecuing, bringing he temperature to 200-227 degrees F
- 1 cup whole rice
- 1 small green bell pepper, chopped
- 1 celery ribs, chopped
- 1 small onion chopped
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon freshly ground black pepper
- salt to taste
- 1 1/2 cups chicken or beef stock
- 2 1/2 cups canned French-fried onion rings, optional
Cheese and Vegetables in Curried Batter

Boil, steam or microwave broccoli & cauliflower until just tender, rinse under cold water, drain
- 300 g broccoli, in bite size pieces
- 300 g cauliflower, in bite size pieces
- 125 g indian cheese
- plain flour
- oil for deep frying
- BATTER
- 1 1/2 cups flour
- 2 tsp. curry powder
- 1/4 tsp garam masala
- 1 1/2 tsp. sugar
- 2 eggs, separated
- 2 1/2 cups milk
Mexican Bean Burgers with Lime Yogurt & Salsa

1.Heat grill to high. Tip the beans into a large bowl, then roughly crush with a potato masher
- 2 x 400g/14oz cans kidney beans, rinsed and drained
- 100 g breadcrumbs
- 2 tsp mild chilli powder
- small bunch coriander, stalks and leaves chopped
- 1 egg
- 200g tub fresh salsa
- 150 ml low-fat natural yogurt
- juice 1/2 lime
- 6 wholemeal burger buns, sliced avocado, sliced red onion and salad leaves, to serve
