Preheat the oven to 450 degrees F
- • 3 tablespoons olive oil
- • 4 chicken thighs with skin and bones

- • 3/4 cup dry white wine
- • 3/4 cup chicken broth
- • 1 1/2 teaspoons dried oregano
- • 1 teaspoon dried thyme
- • 8 ounces frozen artichoke hearts or 1 cup frozen lima beans, thawed
- • 2 tablespoons unsalted butter
BAKED BEANS W PINEAPPLE

Preheat oven to 350 degrees F
- • 4 (16-ounce) cans baked beans
- • 1 (20-ounce) can crushed pineapple, drained
- • 1 cup molasses
- • 1 cup BBQ sauce
- • 2 tablespoon yellow or brown mustard
- • 5 slices cooked bacon, crumbled
- • 1 (6-ounce) can french-fried onions, crushed
- • Salt and freshly ground black pepper
ROAST TURKEY

2 to 3 days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F
- For the brine:
- • 1 (14 to 16 pound) frozen young turkey
- • 1 cup kosher salt
- • 1/2 cup light brown sugar
- • 1 gallon vegetable stock
- • 1 tablespoon black peppercorns
- • 1 1/2 teaspoons allspice berries
- • 1 1/2 teaspoons chopped candied ginger
- • 1 gallon heavily iced water
- For the aromatics:

BLACK BEAN AND CORN SALAD

- • 4 ears corn, husks removed

- • 1 cup diced red bell pepper

- • 2 tablespoons browning and seasoning sauce (recommended: Kitchen Bouquet)
- • 4 tablespoons fresh lime juice
- • 5 teaspoons ground allspice

- • 1 tablespoon salt
- • 2 teaspoons sugar
- • 11/2 teaspoons dried thyme, crumbled
