Dad's Meatballs

Combine all ingredients, mix thouroughly
- 1/2 # ground beef (80/20)
- 1/2 # ground pork
- 2 med. onions chopped
- 1 garlic clove minced
- 1/4 C chopped parsley (can use dried)

- 1 t salt
- 1/2 t pepper

Pepperoni Monkey Bread

Let dough thaw. If using Bridgford Roll Dough, divide each roll piece in half; set aside
- 1 package Bridgford Parkerhouse Rolls

- 1 1/2 loaves Bridgford Frozen Bread Dough divided into 48 equal pieces
- 2 oz sliced Bridgford Pepperoni (about 28 thin slices)
- 1 cup grated Parmesan cheese
- 2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 cup butter, melted
Morel Sauce

In a small saucepan, bring 2 cups water to a boil over high heat
- 2 oz. dried morels, preferably small
- 3 Tbs. unsalted butter
- 1/4 cup finely diced shallots
- 1 large clove garlic, minced
- 1 cup dry Marsala
- 2 cups heavy cream
- Kosher salt
- 1 Tbs. fresh lemon juice
- 1 Tbs. thinly sliced fresh chives
- 1 Tbs. minced fresh tarragon or thyme
- Freshly ground black pepper
Champ (Irish Mash)

Cook potatoes in pot of boiling salted water until very tender, about 15 minutes
- 2 pounds russet potatoes, peeled, cut into 1-inch pieces
- 1/2 cup whipping cream
- 1/4 cup (1/2 stick) butter
- 1 bunch green onions, sliced (about 1 1/3 cups)

- 1/4 cup chilled heavy cream
- 2 teaspoons sugar
- 1 1/2 oz (3 tablespoons) Irish whiskey

Melt butter in 4-quart Dutch oven over medium-high heat
- 3/4 cup butter or margarine
- 2 large celery stalks, chopped
- 1 medium onion, chopped (1/2 cup)
- 9 cups soft bread cubes (15 slices)
- 1 1/2 tsp fresh thyme or 1/2 tsp dried thyme
- 1 teaspoon salt
- 1/2 teaspoon ground sage
- 1/4 teaspoon pepper
Keilbasa

Dad's keilbasa
- 5 pounds pork
- 2 tbsp. salt
- Dozen black peppercorns, crushed or ground pepper
- 1 small onion
- garlic, (1/2 clove)
- mustard seed (maybe 1/2 tbsp.)
- 1 glass cold water
- For 20 lbs. it was 2 tbsp mustard seed so you can use your judgement.
Cannoli Filling

In medium mixing bowl, stir together ricotta, sugar, chocolate chips, orange peel, and vanilla
- 1 pound (2 cups) fresh sheep's- or cow's-milk ricotta, drained 1 hour in cheesecloth-lined sieve
- 3/4 cup superfine sugar
- 1/3 cup miniature chocolate chips
- 4 tablespoons candied orange peel, chopped, or finely grated zest of 2 oranges
- 1 teaspoon vanilla extract
