White Chocolate Mojito Cheesecakes

Stir melted butter into the biscuit crumbs until well combined
- 20 g unsalted butter, melted
- 150 g ginger biscuits (we used ginger shortbread), crushed in a processor
- 1/2 cup (110g) caster sugar
- Finely grated zest and juice of 3 limes, plus 1 thinly sliced lime to garnish
- 100 ml white rum
- 1 cup mint leaves, plus extra to garnish
- 120 g white chocolate, chopped
- 400 g soft cream cheese
- 1 cup (250g) mascarpone cheese
- 300 ml thickened cream, whipped
- Slivered unsalted pistachios, to garnish

Crab & Prawn Short Soup

Leek and Potato Soup

Chop the leeks into small pieces
- 1 pound leeks, cleaned and dark green sections removed, approximately 4 to 5 medium
- 3 tablespoons unsalted butter
- Heavy pinch kosher salt, plus additional for seasoning
- 14 ounces, approximately 3 small, Yukon gold potatoes, peeled and diced small
- 1 quart vegetable broth
- 1 cup heavy cream
- 1 cup buttermilk
- 1/2 teaspoon white pepper
- 1 tablespoon snipped chives
Lemon Curd Icecream

Stir sugar in a small pan with 150 ml water over low heat until dissolved
- 1/3 c caster sugar
- 3 egg yolks
- 600 ml thickened cream
- 1 /t vanilla extract
- 300 g good quality lemon curd
- limoncello liqueur, to serve
BBQ Tandoori Cauliflower

. Blanch the cauliflowers in a pot of salted water for 2-3 minutes until barely tender
- For the fried onion rings:
- 4 baby cauliflowers, trimmed and cut into large florets
- 300 ml thick Greek-style yoghurt
- 3 cm ginger, peeled and finely grated
- 3 garlic cloves, peeled and finely crushed
- ½ tsp sea salt, or to taste
- ½ tsp ground turmeric
- 1 tsp hot chilli powder, or to taste
- 1 ½ tsp garam masala
- ½ tsp ground coriander
- 1 tsp chaat masala
- 2-3 tbsp vegetable oil
- 2 onions, peeled and cut into rings
- 3 tbsp tomato pure
- Sea salt and freshly ground black pepper
- 1 tsp garam masala
- ½ tsp chaat masala
- Handful of coriander leaves, to garnish
Hot Buttered Rum

In a bowl, cream together the butter, sugar, cinnamon, nutmeg, cloves, and salt
- 1 stick unsalted butter, softened
- 2 cups light brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg

- Pinch salt
- Bottle dark rum
- Boiling water

Soak oats in 3/4 cup buttermilk 10 minutes
- 3/4 cup quick-cooking oats
- 1 1/2 cups plus 2 tablespoons well-shaken buttermilk, divided
- 3/4 cup whole-wheat flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/8 teaspoon grated nutmeg
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 2 tablespoons unsalted butter, melted
- 1 tablespoon packed brown sugar
- Accompaniment: sliced bananas
