Best Chargrilled Steak

Tie up the stalk end of your bunch of thyme, place the leafy end in a pestle and mortar and give it a good bash
- • 1 x salsa verde recipe – recipe below
- • 1 large bunch of fresh lemon thyme or thyme
- • 1 clove of garlic
- • 1 anchovy fillet
- zest of 1 lemon
- • 10 tablespoons extra virgin olive oil
- • 4 x 225g/8oz fillet steaks or sirloins
- • 4 rashers of smoked streaky bacon
- • 8 medium large Portobello or other flat-gilled mushrooms
- • sea salt and freshly ground black pepper
- First of all, make your salsa verde.
- • 11/2–2 cloves of garlic, peeled
- • 1 small handful of capers
- • 1 small handful of gherkins pickled in sweet vinegar
- • 6 anchovy fillets
- • 2 large handfuls of flat-leaf parsley, leaves picked
- • 1 bunch of fresh basil, leaves picked
- • 1 handful of fresh mint, leaves picked
- • 1 tablespoon Dijon mustard
- • 3 tablespoons red wine vinegar
- • 8 tablespoons really good extra virgin olive oil
- • sea salt and freshly ground black pepper
Roast Turkey/Roast Chicken

2 to 3 days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F
