Chili con Carne and Chili con Queso

Heat the oil in a large, heavy pot over medium-high heat
- Queso:
- 1 tablespoon bacon fat or vegetable oil
- 1 1/2 pounds ground beef
- 2 cups chopped yellow onion
- 1 cup chopped green bell pepper
- 4 teaspoons minced garlic
- 2 tablespoons chili powder
- 1 tablespoon Essence, recipe follows
- 1/2 teaspoon salt
- 2 teaspoons ground cumin
- 1 teaspoon dried Mexican oregano
- 1/4 teaspoon cayenne
- 1 (15-ounce) can whole peeled tomatoes
- 3 tablespoons tomato paste
- 1 teaspoon sugar
- 2 cups water
- 1/2 pound fresh poblano or Anaheim chiles
- 2 tablespoons vegetable oil
- 1 cup chopped white onions
- 1/4 teaspoon cayenne
- 2 tablespoons all-purpose flour
- 1 large tomato, peeled, seeded and diced
- 1 cup milk or cream
- 1 1/2 cups grated Cheddar

Scones with Muddled Berries and creme fraiche

- 5 c (750g) self raising flour, sifted, plus extra to dust
- 1/3 c (75g) caster sugar
- 125 g chilled unsalted butter, chopped
- 2 c buttermilk, plus extra to brush
- creme fraiche, to serve
- Muddled berries
- 120 g raspberries
- 120 g blueberries
- 250 g strawberries, hulled, quartered
- 1-2 T caster sugar
- grated zest of 1 orange
Beef and Broccoli Stir Fry

Place the broccoli spears into a heatproof bowl and cover them with boiling water
- • 200g purple sprouting broccoli
- • sea salt and freshly ground black pepper
- • 2 x 300g good-quality sirloin steaks
- • 2 teaspoons coriander seeds
- • olive oil
- • 1 red onion, peeled and finely sliced
- • 2 cloves garlic, peeled and finely sliced
- • a thumb-sized piece of fresh ginger, peeled and finely chopped
- • 3 tablespoons soy sauce
- • 1 teaspoon sesame oil

- 1 Stick Butter (softened)
- 2 Tbsp. Condensed Milk
- 1/4 C + 1 Tbsp. Honey
Chili Beef Skewers

- 8 wooden skewers
- 1/2 cup fresh cilantro
- 4 cloves garlic, thinly sliced
- 3 tbsp low-sodium soy sauce
- 1 tsp grated orange zest
- 1 tsp sriracha
- 1 tsp fish sauce
- 1 tsp brown sugar
- 1 lb lean beef sirloin, cut into 1/8-inch strips
- 1 each red, green and yellow bell peppers, cored, seeded and cut into 2 1/2-inch pieces (optional)
- Vegetable oil cooking spray
- Dipping sauce
- 1/2 cup lowfat mayonnaise
- 2 tbsp chopped fresh basil
- 1 tbsp fresh lime juice
- 1 tsp fish sauce
