Blueberry Chipotle Chutney

Combine all ingredients in a large saucepan; bring to a boil
- 4 cups fresh blueberries
- 1 cup finely chopped Granny Smith apple
- 1/2 cup white wine vinegar
- 1/3 cup sugar
- 1/3 cup honey
- 3 tablespoons grated orange rind
- 1 tablespoon mustard seeds
- 2 tablespoons chopped canned chipotle chiles in adobo sauce (about 2 chiles)
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
Harissa, Cumin and Lemon Chicken

Finely grate the lemon zest into a bowl
- 1 lemon, plus wedges to serve
- 1/3 c EVOO
- 1 1/2 T finely chopped ginger
- 1 1/2 T ground cumin
- 1 1/2 T ground coriander
- 1 1/4 T mild curry powder
- 3/4 t pimenton
- 1/2 t each, cinnamon, turmeric and caster sugar
- 1 T harissa, or TT
- 1 t sundried tomato paste
- 2 onions, halved, thinly sliced
- 3 garlic cloves, pressed
- 3 bay leaves
- 6 large chicken thigh cutlets
- Couscous, coriander and mint leaves, thick Greek style yoghurt to serve

- As well as your roasted veg from the roast chicken recipe, you’ll need:

- 1/2 bunch parsley
- 1 T whole black peppercorns
- 2 spring onions, roughly chopped
- 3 x 175 chicken breast fillets
- 1 small iceberg, lettuce, shredded
- 2 cucumbers, thinly sliced into ribbons
- 1 cup coriander leaves
- 1 c whole egg mayonnaise

- SAUCE
- 1 cup brown sugar
- 250 ml malt vinegar
- 1 tsp ground cinnamon
- 1 tsp chilli powder
- 1 tsp hot English mustard powder
- 2 tbs tomato sauce
- 2 tbs Dijon mustard
- 125 ml bourbon
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 bay leaves
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 jalapeno chilli, finely chopped
- 1 orange, peeled rind

Heat oven to 375°F. Wrap beets loosely in foil and roast until tender, 45 minutes to 1 hour
- 16 ounces (about 4) medium golden and/or red beets
- 1/4 cup grapeseed oil
- 1/4 cup sherry vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon dark sesame oil
- 2 cups arugula
- 2 medium vine-ripened tomatoes, cut into thin wedges
