Sauteed Chicken Breasts with Dijon Herb Sauce

Can be made in 20 minutes!
- 4 6-8 oz skinless chicken breasts
- 1 tsp salt
- 1/2 tsp pepper
- 2 T olive oil
- 2 T chopped shallot
- 1 cup dry white wine
- 1 T dijon mustard
- 1/2 cup heavy cream
- 1 tsp chopped fresh tarragon
- 1 tsp chopped fresh parsley
English Muffin French Toast

Whisk together first 4 ingredients in a bowl
- 4 large eggs
- 1 cup nonfat buttermilk
- 2 tsp orange zest
- 1 tsp vanilla extract
- 6 english muffins
- cooking spray
- 1 cup fat free greek yogurt
- 2 T maple syrup
- sliced strawberries
Green Beans with Bacon Vinaigrette

- 2 pounds green beans, trimed
- 6 slices of bacon
- 2 shallots, sliced
- 2 T cider vinegar
- 2 T whole grain mustard
- 2 T. olive oil
Spicy Nuts

- 2 1/2 lbs mixed nuts
- 1/4 c coarsely chopped fresh rosemary
- 1 tsp cayenne pepper
- 1 T. plus 1 tsp brown sugar
- 1/2 tsp sea salt
- 2 T melted butter
Cajun Corn Maque Choux

- 1 small onion, chopped
- 1/2 green pepper, chopped
- 2 T olive oil
- 3 cups frozen corn or fresh corn
- 2 tomatoes, diced
- 1/4 pound andouille sausage or italian chicken sausage, cooked and diced

Chicken and Pasta Salad

- Dressing:
- 1 1/2 cups red or green seedless grapes, halved
- 3/4 cup oven roasted sliced almonds
- 8 oz bow tie pasta
- 3 cups chopped chicken breasts (I use roasted chicken)
- sweet and sour dressing
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/4 cup red wine vinegar
- 1/2 tsp soy sauce
- salt and pepper
Hot Caprese Dip

- 10 ounces fresh mozzarella, chopped into cubes
- 2 roma tomatoes, seeded and juiced
- 3 tablespoons freshly chopped basil (or about 1 tablespoon dried) + more for garnish
Greek Salad

In a large bowl, combine peppers, cucumber, tomatoes, feta, and onion
- 24 oz jar roasted red peppers, drained and sliced thin
- 12 oz jar sliced pepperoncini peppers, drained
- 1 cucumber, seeded and thinly sliced
- 1 pint cherry tomatoes, quartered
- 8 oz pkg feta cheese
- 1/2 red onion, thinly sliced
- 2 T sherry vinegar
- 1 T olive oil
- 1 tsp salt
- 1 tsp pepper
- 2 T chopped oregano
- 2 T chopped basil
