Bananas Foster Bars

Bars: Preheat oven to 350°F
- Bars:
- 1/2 cup (1 stick) butter, softened
- 1 cup dark brown sugar, packed
- 1 egg
- 1 tablespoon dark rum or 1 teaspoon rum extract
- 1 cup flour
- 1/8 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup bananas, diced
- 1/2 cup (2 ounces) pecans or walnuts, chopped
- Frosting:
- 2 tablespoons unsalted butter at room temperature
- 4 ounces cream cheese, softened
- 4 tablespoons light brown sugar
- 1 teaspoon rum or pure vanilla extract
- 1 teaspoon cinnamon
- 1 to 2 cups confectioners’ sugar, sifted
Pecan Caramels

Line a 13-in. x 9-in. pan with foil; grease the foil with 2 teaspoons butter and set aside
- 2 teaspoons plus 1 cup butter, divided
- 1-1/4 cups sugar
- 1-1/4 cups packed brown sugar
- 1 cup dark corn syrup
- 2 cups heavy whipping cream, divided
- 2 pounds chopped pecans
- 1 teaspoon vanilla extract
