- 2 1/2 - 3 lb. corned beef brisket, point tip
- 1 cup apple juice
- 1/4 cup brown sugar, packed

Apple Cider Cinnamon Rolls

1. In a large bowl, combine 2-1/4 cups flour, sugar, yeast and salt
- APPLE CIDER CREAM CHEESE FROSTING:
- 3-1/4 3-1/4 3-1/4 cups all-purpose flour
- 1/4 1/4 1/4 cup sugar
- 1 1 1 package (1/4 ounce) quick-rise yeast
- 1/2 1/2 1/2 teaspoon salt
- 3/4 3/4 2% cup 2% milk
- 1/4 1/4 1/4 cup apple cider or juice
- 1/4 1/4 1/3 cup plus 1/3 cup butter, softened, divided
- 1 1 1 egg
- 2 2 2 cups finely chopped peeled tart apples
- 1-1/4 1-1/4 1-1/4 cups packed brown sugar
- 3/4 3/4 3/4 cup finely chopped walnuts
- 3 3 3 teaspoons ground cinnamon
- 2 2 2 cups apple cider or juice
- 1 1 1 cinnamon stick (3 inches)
- 1 1 1 package (8 ounces) cream cheese, softened
- 1/4 1/4 1/4 cup butter, softened
- 1 1 1 cup confectioners' sugar
- 3 3. to 12 13-in. 9-in. 30 starting with a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in a greased 13-in. x 9-in. baking dish. Cover and let rise in a warm place for 30 minutes.
- 4 4. 325° 30-35 to to 1/4 20 minutes or until golden brown. For frosting, place cider and cinnamon stick in a small saucepan. Bring to a boil; cook until liquid is reduced to 1/4 cup, about 20 minutes. Discard cinnamon stick; cool cider.
- 5 5. 1 In a large bowl, beat cream cheese and butter until fluffy. Add confectioners’ sugar and reduced cider; beat until smooth. Spread over warm rolls. Yield: 1 dozen.
Squash Rounds with Shallot-Cider Sauce

1. Preheat oven to 350°F
- 1 3-pound butternut squash, with a 6-inch-long neck (see shopping tip)
- 2 Tbsp canola oil
- 2 cup thinly sliced shallots (8-10 medium)
- 1 tsp light brown sugar
- 1/2 tsp salt
- 1 cup apple cider
- 1 Tbsp cider vinegar
- 1/2 cup chopped walnuts, toasted (see tip)
Cabbage Roll Casserole

1. Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink

- 1 1 1 large onion, chopped
- 3 3 3 garlic cloves, minced
- 2 2 2 cans (15 ounces each) tomato sauce, divided
- 1 1 1 teaspoon dried thyme
- 1/2 1/2 1/2 teaspoon dill weed
- 1/2 1/2 1/2 teaspoon rubbed sage
- 1/4 1/4 1/4 teaspoon salt
- 1/4 1/4 1/4 teaspoon pepper
- 1/4 1/4 1/4 teaspoon cayenne pepper
- 2 2 2 cups cooked rice
- 4 4 4 bacon strips, cooked and crumbled
- 1 1 head 1 medium head cabbage (2 pounds), shredded
- 1 1 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 2 2. 13x9-in. Layer a third of the cabbage in a greased 13x9-in. baking dish. Top with half of the meat mixture. Repeat layers; top with remaining cabbage. Pour remaining tomato sauce over top.
- 3 3. 45 10 5 12 45 minutes. Uncover; sprinkle with cheese. Bake 10 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Yield: 12 servings.
