Lentil Salad

Great summer salad. Add extra vegetables like cucumber or zucchini
- 2 quarts water
- 2 cups lentils
- 1/2 cup minced celery
- 1/2 cup minced red onion
- 1/2 cup thinly sliced carrot
- 1/3 cup sweet balsamic vinegar
- 1/4 cup white wine vinegar
- 1/4 cup olive oil
- 1 Tablespoon dried oregano, or Italian spice mix

1. In a large bowl, beat butter until creamy
- 1/2 cup butter, softened
- 4-1/2 cups confectioners' sugar
- 1-1/2 teaspoons vanilla extract
- 5 to 6 tablespoons 2% milk
- 1 . In a large bowl, beat butter until creamy. Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Yield: About 3 cups.
Queso Fundido Dip Recipe

1. Preheat oven to 350°. Crumble chorizo into a 10-in
- 1 pound uncooked chorizo
- 2 cups fresh or frozen corn, thawed
- 1 large red onion, chopped
- 1 poblano pepper, chopped
- 8 ounces fresh goat cheese, crumbled
- 2 cups cubed Monterey Jack cheese
- 1 cup cubed pepper jack cheese
- 1 large tomato, seeded and chopped
- 3 green onions, thinly sliced
- Blue corn tortilla chips
- 1 . Preheat oven to 350°. Crumble chorizo into a 10-in. ovenproof skillet; add corn, red onion and pepper. Cook over medium heat 6-8 minutes or until meat is fully cooked; drain. Stir in the cheeses.
- 2 . Bake 14-16 minutes or until bubbly. Sprinkle with tomato and green onions. Serve with chips. Yield: 6 cups.
Nutella Oatmeal Cookies

Preheat the oven to 375°F
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1/2 cup Nutella
- 3/4 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 2 cups old fashioned rolled oats
- 1/2 cup chopped hazelnuts
- 1/2 cup mini chocolate chips (semisweet)
Blue Cheese Potato Salad

This satisfying potato salad uses waxy-fleshed red potatoes
- 8 slices bacon
- 2 pounds red new potatoes
- 1/3 cup olive oil
- 1/4 cup white vinegar or cider vinegar
- 3 bunch green onions, chopped
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1 1/2 ounces blue cheese, crumbled
