New England Clam Chowder

- 4 dozen little neck or cherry stone clams, scrubbed
- 4 thick slices bacon, cut into lardons
- 1 large onions, cut into 1/4 inch dice
- Kosher salt
- 11/2 pounds Yukon gold potatoes, cut into 1/2 inch dice
- 3 tablespoons flour
- 1 1/2 cups heavy cream
- 1 1/2 cups whole milk
- 1 bundle of thyme
- 2 bay leaves
- 1 to 2 shakes hot sauce, optional (recommended: Tabasco)
- Extra-virgin olive oil
Lamb Chops with Pistachio Salsa Verde

This recipe was inspired by my dad, Mark Boone, who loves lamb chops and pistachios
- 2 medium shallots, coarsely chopped
- 1 garlic clove, coarsely chopped
- 1 cup (packed) fresh parsley leaves with tender stems
- 1/2 cup (packed) fresh mint leaves with tender stems
- 1/2 cup unsalted, toasted pistachios
- 1/4 cup fresh lemon juice
- 2 tablespoons capers
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon kosher salt
- 1/2 cup extra-virgin olive oil
- 12 (1-inch-thick) lamb rib or loin chops (about 2 pounds)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper

- 8 ounces pancetta, diced into 1/4-inch pieces
- Vegetable oil cooking spray
- 2 (1 1/2-pound) whole branzino (or striped bass or red snapper), cleaned, heads removed and filleted
- Kosher salt and freshly ground black pepper
- 2 lemons, zested
- 1/4 cup roughly chopped fennel fronds
- 2 tablespoons chopped fresh thyme leaves
- 2 lemons, thinly sliced
- 1 medium bulb fennel, thinly sliced

Polyface Oven Fried Chicken

Melt butter and lard in 9 x 13 pan in hot oven
- 1 Polyface Broiler chicken (cut-up)
- 1/2 cup flour (your choice of wheat or white. I have also used rice flour with success)
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon pepper
- 1/4 cup butter
- 1/4 cup lard
- 1 egg, beaten
- 3 tablespoon milk
