Bruschetta, the Italians' answer to chips and salsa, can make a perfectly healthy beginning to a meal
- Tomato Basil:
- 1 baguette, cut on the diagonal into 1/2" slices
- 2 large tomatoes, seeded and chopped
- 2 cloves garlic, minced
- 1/2 cup chopped fresh basil
- 1 Tbsp olive oil
- Salt and black pepper to taste
- Pepperonata:
- 1/2 cup part-skim ricotta
- 2 cups pepperonata (search recipes) warmed
French Toast with Vanilla Bourbon and Caramelized Bananas

Heat the butter in a medium nonstick pan over medium heat
- 2 Tbsp unsalted butter
- 1/4 cup bourbon, divided
- `/4 cup brown sugar
- 1/4 cup crushed walnuts
