Crispy Ham Omelet with Cheese & Mushrooms

Heat 2 teaspoons butter in a medium skillet or saute pan until foaming, then add the mushrooms
- 2 Tbsp butter
- 1/2 lb white or cremini mushrooms, stems removed, sliced
- Salt and black pepper to taste
- 4 slices prosciutto, cut into think strips
- 8 eggs
- 4 Tbsp milk
- 1 cup shredded Gruyere or other Swiss cheese
- Chopped chives or scallions (optional)

- 1/2 cup apple cider vinegar
- 1/2 cup water
- 2 Tbsp sugar

- 1 1/2 cups sliced mushrooms

- 1/4 cup crumbled blue cheese
- 4 small soft rolls about 2” in diameter (Martin’s mini potato rolls are perfect for the job)

- 2 lb boneless short ribs

- 2 cups low-sodium beef broth
- 3 large carrots, cut into large chunks
- 2 onions, quartered
- 2 stalks celery, cut into large chunks
- 8 cloves garlic, peeled
- 2 bay leaves
- Gremolata (optional):
- 1/2 cup chopped parsley
- 2 cloves garlic, minced
- Grated zest of 2 oranges or lemons
