Preparation

Step 1

Dissolve sugar in lukewarm water and sprinkle the yeast over it. Let sit for 10 minutes to "blossom."

Combine the yeast mixture with milk and add the 2 1/2 cups flour. Beat until smooth. Cover and let rise in warm place until light and bubbly.

Add the beaten eggs, sugar, melted butter, and salt. Mix thoroughly. Stir in enough sifted flour to make dough that is neither too soft of too stiff. Knead dough until it doesn't stick to hands, then turn out onto a floured board, and knead until smooth. Place in bowl coated with nonstick cooking spray, cover, and let rise in warm place until doubled in size, about 45 minutes to an hour depending on kitchen temperature.

Punch down the dough and let it rise again for about 45 minutes to an hour or until it has doubled in size.

Form the dough into either a greased loaf pan or whatever shape you prefer and brush with the glaze (egg yolk whisked with 2 teaspoons of water).

Bake at 400°F for 15 minutes, then lower the oven to 350°F and continue to bake for 40 minutes until golden brown.
