- 4 oz. feta
- 4 oz. cream cheese
- 1/2 c. mayo
- 2 cloves garlic minced
- 1/4 tsp. each basil, oregano, dill
- 1/8 tsp. thyme
- dash cayenne
- salt & pepper
Cheeseburger Soup

MELT: 1 1Tbsp. unsalted butter 1 1lb
- MELT:
- 1 1Tbsp. unsalted butter
- 1 1lb. ground sirloin
- 1 1cup diced onions
- 3 ⁄4 3/4cup diced celery
- 1 ⁄2 1/2cup diced carrot
- 1 1tsp. minced fresh garlic
- STIR IN:
- 3 3cups low-sodium chicken broth
- 2 2cups peeled and diced russet potatoes
- 1 1tsp. dried basil
- MELT:
- 3 3Tbsp. unsalted butter
- 1 ⁄4 1/4cup all-purpose flour
- 11 ⁄2 11/2cups whole milk
- ADD:
- 2 2cups grated Cheddar
- 1 ⁄4 1/4cup ketchup
- 2 2Tbsp. prepared yellow mustard
- Black pepper to taste
- Chopped dill pickles
Seven Layer Salad with Creamy Salsa Vinaigrette

Instructions make the dressing Add all ingredients to a blender and puree until smooth
- 1/2 cup Greek yogurt or coconut milk
- 1/2 cup your favorite mild or medium Salsa
- 2 tablespoons mayonnaise or Earth Balance vegannaise
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 heaping tablespoon chopped green onions
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1 to 2 heads romaine lettuce, roughly chopped
- 1 can black beans, drained and rinsed
- 1 medium red onion, sliced or chopped, your choice
- 1/2 cup green olives, sliced
- 3/4 cup corn kernels (thawed from frozen or fresh from the cob - no need to cook)
- 1 avocado, pit removed, peeled and chopped
- 1 orange bell pepper, chopped
- 3 cups cherry tomatoes, halved or quartered (about 2 cups after slicing)
- 1 tablespoon fresh cilantro, dill, and/or basil, chopped

- 2 ounces (about 1/3 cup) mild blue cheese, crumbled
- 1/4 cup buttermilk
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 teaspoon fresh lemon juice
- 1 teaspoon grated lemon zest
- Kosher salt and freshly ground black pepper, to taste
- Canola oil, for oiling rack
- 2 pounds whole chicken wings, separated into two pieces
- 2 large egg whites
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 3 tablespoons unsalted butter
- 1/2 cup Frank's Red Hot Original
- Kosher salt and black pepper, to taste
- Assorted vegetables (such as carrots, celery and radishes)

Crispy Carrot Fritters with Cilantro & Creme Fraiche

Combine carrots, onion, cheese, and cilantro in a large bowl
- 1 bunch carrots, peeled and grated on the large holes of a grater
- 1/3 c. minced onion
- 1/3 c. grated cheddar
- 1/4 c. chopped cilantro
- 1/3 c. flour
- 1/3 c. creme fraiche, sour cream, or heavy cream (if using cream, reduce quantity to 1/4 c.)
- 1 egg
- salt & pepper
- oil for frying (I use grapeseed)
