Panang Chicken Curry

- 3 1/2 cups canned unsweetened coconut milk, divided
- 1 Tablespoon plus 1 teaspoon Thai red curry paste
- 8 kaffir lime leaves
- 1 1/2 cups thinly sliced onion
- 2 large leafy sprigs Thai basil or regular basil
- 1 '12 pounds skinless boneless chicken breast halves, cut into '14- to %-inch-thick slices
- large red bell pepper. cut into 2x'!4-inch strips
- 1 8-ounce can bamboo shoots, drained
- 4 teaspoons tamarind paste
- 2 teaspoons fish sauce
- teaspoon sugar
- Steamed rice
Pimento Cheese

Pimientos are large, sweet, heart-shaped peppers that are typically used for canning
- 1 cup mayonnaise
- 1/4 cup small Vidalia onion, finely chopped
- 1/2 teaspoon hot sauce
- 1 pound sharp cheddar cheese, coarsely shredded
- 1/2 cup diced drained pimientos (from one 7-ounce jar)
Roasted Zucchini and Garlic Soup

Great use for summer zucchini glut!
- 2 small heads of garlic
- 2 Lbs zucchini, cut into 1 inch chunks
- 1 large yellow onion, cut into 1 inch chunks
- 2 TBS extra virgin olive oil
- salt and pepper
- 5 cups chicken or vegetable oil
- 1 5 oz package Boursin Herb and Garlic Cheese
Norwegian Sour Cream Cookies

Mix together your wet ingredients (butter, sugar, egg, sour cream and vanilla) until smooth
- 1/3 cup butter (softened)
- 2/3 cup sugar
- 1 beaten egg
- 1/3 cup SOUR cream*
- 1 tsp vanilla
- 1 2/3 cups sifted flour
- 1 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 tsp. salt
- Cinnamon Sugar: Combine a few tablespoons of sugar and about 1-2 tsp. ground cinnamon
- NOT commercial sour cream but cream or heavy cream that has gone sour or bad.
Chicken in Peanut Sauce

Trim chicken Combine onion, butter, and garlic in microwavable dish
- 8 Chicken thigh fillets
- 1 finely chopped onion
- 1 glove garlic, crushed
- 2 TBS butter
- 1/4 cup crunchy peanut butter
- 1/2 cup chicken stock
- 1/4 cup honey
- 1 ts grainy mustard
- 1 ts curry powder
- pinch cardamom
- dash tabasco
Venetian Jewels

- 8 ounce can almond paste
- 1 1/2 cup butter, softened
- 1 cup sugar
- 4 eggs separated
- 2 cups sifted flour
- 1/4 ts salt
- 10 drops green food coloring
- 8 drops red food coloring
- 12 ounce jar apricot preserves
- 3 ounces semisweet chocolate

Crust Cream butter and sugar, beat in egg, sift, then stir in flour

- 1/2 cup unsalted butter
- 1/4 cup sugar
- 1 large egg
- 1 1/4 cup (6.25 ounces) all purpose flour, sifted

- 1/2 cup sugar
- 2 large eggs
- 1/2 ts ground ginger

- CRUST
- 10 ounces King Arthur Mellow Pastry Blend
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 ounce confectioners' sugar
- 1/2 ounce buttermilk powder
- 1 5/8 ounces vegetable shortening
- 5 ounces very cold unsalted butter
- 1 teaspoon vinegar, cider or white
- 3 1/2 to 5 ounces ice water
- TOPPING
