Rosemary Cookies with Tomato Jam

- 2 cups (280 g) all-purpose flour
- 1/4 cup (40 g) stone-ground yellow cornmeal or polenta
- 1/2 teaspoon salt
- 1 cup (8 ounces/225 g) unsalted butter, at room temperature
- 10 tablespoons (135 g) sugar
- 2 large egg yolks
- 1 1/2 tablespoons finely chopped fresh rosemary leaves
- Tomato Jam
- 2 1/4 pounds (1 kg) ripe tomatoes (about 5 large)
- 2 1/4 cups (450 g) sugar
- 2 or 3 grinds of black pepper
- Big pinch of salt
- 1 teaspoon freshly squeezed lemon juice
Chicago Italian Beef Sandwich

Rub meat with dry ingredients, cover and refrigerate for 2 to 3 hours
- 4 pounds top round with fat cap
- 3 tablespoons Italian seasoning

Crockpot Italian Beef (Sandwiches)

- Ingredients for Beef
- 1 5 lb. rump roast
- 3 cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon onion salt
- 1 teaspoon dried parsley
- 2 cloves garlic, minced
- 1 bay leaf
- 1 package dry Italian salad dressing mix
- 1 . Place roast in slow cooker, and pour all other ingredients over roast.
- 2 . Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.
