Didn't know about this until a visit to Scotland
- 1 boneless chicken breast, cubed
- 1 tsp chopped and crushed ginger
- 2 cloves garlic, crushed
- 1 tsp chili powder
- 1/4 tsp tumeric
- 1/4 tsp salt
- 2/3 cup plain yogurt
- 1/4 tsp curry powder
- 1/4 tsp garam masala
- 3 Tbs lemon juice
- 1 Tbs olive oil
- 1/4 tsp coriander
- 1/4 tsp corn starch
ROASTED SWEET ONIONS WITH CABRALES BLUE CHEESE

- 1 tablespoon cooking oil
- 2 cloves garlic, minced
- 2 fresh ears of corn
- 1 teaspoon chili powder
- 1 small avocado, seeded, peeled,

- 1/2 cup chopped roasted red pepper
- 1/4 cup snipped fresh cilantro
- 1/4 teaspoon salt

Cook quinoa with broth according to package directions
- 1 cup red Quinoa cooked with broth
- 2 cups chicken or vegetable broth
- 1 -15 oz. can black beans, drained & rinsed
- 2 cups roasted corn kernels
- 1 avocado, cut into 1/2 inch pieces
- 1 pint grape tomatoes, halved
- 1/2 cup red onion, finely diced
- 3/4 cup Cilantro Salad Dressing
- 1/2 bunch cilantro, chopped
- 1/4 cup olive oil
- Zest of 1 lime
