Pappardelle with Porcini and Pistachios

- 6 tablespoons unsalted butter
- 1 large red onion cut into 3/4 inch dice
- 1 1/2 pound fresh porcini or cremini
- mushrooms, thinly sliced
- Salt and freshly ground pepper
- 1 shallot, minced
- 3 garlic clove, thinly sliced ~.3
- 2 cups chicken stock or low-sodium broth
- 2 tablespoons chopped flat-leaf parsley
- 1/2 cup unsalted roasted pistachios
- 1/2 teaspoon fresh lemon juice
- 2 small chile, such as red Thai chile,
- seeded and minced
- 1 pound pappardelle, preferably fresh
- 2 tablespoons extra-virgin olive oil
- Freshly grated Parmigiano-Reggiano

grill roasted clam linguini

Clams cooked in the shell pop open on the grill, just like they do when steamed
- 1/4 cup extra-virgin olive oil
- 4 garlic cloves, chopped
- 1 1/2 teaspoons finely grated lemon peel,
- divided
- 3/4 teaspoon dried crushed red pepper
- 1 1/3 cups Sauvignon Blanc or other
- non-oaky white wine
- 2 1/2 tablespoons fresh lemon juice
- 3 canned anchovy fillets, minced
- 2 tablespoons chopped fresh Italian

PRINCESS ARTICHOKES

1. Rinse the artichokes. Set out a large bowl of cold water, and add 3 tablespoons of the lemon juice to it
- 2 lb baby artichokes (about 10)
- 5-6 Tbsp lemon juice + additional for topping (optional)
- 3 Tbsp extra virgin olive oil + additional for topping (optional)
- 3 cloves garlic, minced
- 1 bulb fennel, top removed and reserved,
- cored and thinly sliced
