Preheat the oven to 350 degrees F
- Good olive oil
- 2 cups (1/2-inch diced) bread from a French boule, crusts removed
- 16 plum tomatoes, cut 1/2-inch dice (about 2 1/2 pounds)
- 1 tablespoon minced garlic (3 cloves)
- 2 tablespoons sugar
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup julienned basil leaves, lightly packed
- 1 cup freshly grated Parmesan cheese

Mash bananas, then add all ingredients
- 3 ripe bananas
- 1/2 cup melted butter
- 1 cup sugar
- 1 1/2 cup flour
- 1 tsp salt

Combine chili sauce, grape jelly, and mustard in Crock Pot and stir well
- 1 1/2 cups chili sauce
- 1 cup grape jelly (can use currant jelly)
- 1 to 3 teaspoons Dijon mustard
- 1 pound lean ground beef
- 1 egg, lightly beaten
- 3 tablespoons fine dry bread crumbs
- 1/2 teaspoon salt
- (or use frozen meatballs)
Kung Pao Chicken

Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat
- 1 tablespoon canola oil, divided
- 4 cups broccoli florets
- 1 tablespoon ground fresh ginger (such as Spice World), divided
- 2 tablespoons water
- 1/2 teaspoon crushed red pepper
- 1 pound skinless, boneless chicken breasts, cut into 1/4-inch strips
- 1/2 cup fat-free, less-sodium chicken broth
- 2 tablespoons hoisin sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons low-sodium soy sauce
