Hand-Packed Pot Stickers

- Soy Scallion Dipping Sauce:
- 1 cup chopped napa (Chinese) cabbage
- 1 cup chopped spinach
- 1/4 cup minced green onions
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon minced peeled fresh ginger
- 1/2 teaspoon dark sesame oil
- Dash of white pepper
- 3 garlic cloves, minced
- 1/3 pound lean ground pork
- 1/4 pound peeled and deveined shrimp, chopped
- 24 round wonton wrappers or gyoza skins
- 1 tablespoon canola oil, divided
- 2 cups fat-free, less-sodium chicken broth, divided
- Green onion strips (optional)
- 5 tablespoons mirin (sweet rice wine)
- 1/4 cup low-sodium soy sauce
- 1/4 cup seasoned rice vinegar
- 3 tablespoons chopped green onions
- 1 teaspoon chile paste with garlic
Baked Coconut Shrimp

Very good
- Shrimp:
- 1/4 cup flour
- 2 T packed brown sugar
- 1/4 tsp salt
- Dash of ground red pepper (cayenne)
- 1 egg
- 1 T lime juice
- 1 cup shredded coconut
- 1 lb uncooked, peeled, deveined medium shrimp, thawed if frozen (about 40)
- 2 T butter, melted
- Apricot Sauce:
- 3/4 cup apricot preserves
- 1 T lime juice
- 1/2 tsp ground mustard
Green Jacket Salad and Dressing

To make croutons, separate pita bread, tear into small pieces and brown slightly in oven until bread is crisp
- Green Onions
- 2 TBLS. Olive Oil
- 1 TBLS. Red Wine Vinegar
- 1 Tomato, chopped
- 1 Cucumber, chopped
- 2 tsp. seasoning salt
- 2 tsp. accent
- 1/2 tsp oregano
- 1/2 tsp fresh parsley
- Pita Bread Croutons (Plain)
- 1/2 head of lettuce

In saucepan melt butter. Add onions and cook until tender, 10 minutes
- 3 cups shredded cooked chicken
- (4 split chicken breasts)
- 1 package Pillsbury pie crust
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup chicken broth
- 2/3 cup milk
- 2 cups frozen vegetables
Almost-Famous Broccoli-Cheddar Soup

Melt the butter in a large Dutch oven or pot over medium heat
- 6 tablespoons unsalted butter
- 1 small onion, chopped
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 3 cups low-sodium chicken broth
- 2 bay leaves
- 1/4 teaspoon freshly grated nutmeg
- Kosher salt and freshly ground pepper
- 4 7-inch sourdough bread boules (round loaves)
- 4 cups broccoli florets (about 1 head)
- 1 large carrot, diced
- 2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish
Caramelized Shallots

- 6 tablespoons (3/4 stick) unsalted butter
- 2 pounds fresh shallots, peeled, with roots intact
- 3 tablespoons sugar
- 3 tablespoons good red wine vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh flat-leaf parsley

Melt butter on low heat. Add Karo while stirring and then add condensed milk and sugar
- 1 lb Land O Lakes butter
- 1 bottle dark Karo
- 1 can condensed milk
- 2 cups sugar
Houston Buttermilk Garlic Dressing

Blend all in blender until smooth, flavor is better when it sets for a couple hours and its great used for a dip
- 2/3 C. Sour Cream
- 1 C. Mayonnaise
- 1/4 tsp. Crushed Garlic
- 1/2 tsp. Salt
- 1 tsp. Paprika
- 1/2 tsp. Freshly Ground Pepper
- 1 tsp. Mustard Powder
- 2 Tbsp. Sugar
- 1/2 C. Buttermilk
